This Air Fryer Baked Potato recipe produces perfectly crispy skin with fluffy interiors using an air fryer. A quick and easy alternative to traditional oven baking, these russet potatoes are seasoned with olive oil, kosher salt, and fresh cracked black pepper, making a versatile side dish that pairs beautifully with butter or your favorite toppings.

Ingredients

Potatoes

  • 4 medium-sized russet baking potatoes (8 ounces each), washed and dried (32 ounces total)

Seasoning

  • 1½ tablespoons extra virgin olive oil or vegetable oil
  • 1½ teaspoons kosher salt
  • 1½ teaspoons fresh cracked black pepper, for topping

Butter

  • Butter, for topping (amount to taste)

Instructions

  1. Preheat Air Fryer: Preheat your air fryer to 400°F. If your air fryer model does not require preheating, you may skip this step. Refer to your user’s manual for best results.
  2. Oil the Potatoes: Use a pastry brush to liberally coat each washed and dried potato with the extra virgin olive oil, ensuring all surfaces are covered for crispiness.
  3. Season Potatoes: Evenly sprinkle kosher salt on both sides of each oiled potato to enhance flavor and assist in crisping the skin.
  4. Air Fry Potatoes: Place each potato in the air fryer basket. Cook at 400°F for 25 minutes on one side, then carefully flip each potato and continue cooking for another 20 to 25 minutes. To check doneness, insert a kitchen knife into the center of a potato; if it slides in easily, the potatoes are fully cooked. If not, continue cooking in 5-minute increments until tender.
  5. Prepare and Serve: Using a sharp kitchen knife, slice down the center of each potato without cutting all the way through. Fluff the inside with a fork, add butter, sprinkle fresh cracked black pepper on top, and serve immediately while hot.

Notes

  • Be sure to dry potatoes thoroughly before oiling for best crispy skin results.
  • Flipping the potatoes halfway through ensures even cooking on all sides.
  • You can customize toppings by adding sour cream, chives, cheese, or bacon bits.
  • Cooking times may vary slightly depending on the size of potatoes and air fryer model.
  • If you prefer softer skin, reduce the oil slightly or skip it altogether.
