Ideal for a speedy breakfast or a delicious snack, this recipe yields eight tasty muffins in just about 13 minutes.

Ingredients

Dry Ingredients

  • 1 1/2 Cups All-Purpose Flour or Gluten-Free All-Purpose Flour
  • 3/4 Cup Granulated Sugar
  • 1/2 Tsp Salt
  • 2 Tsp Baking Powder

Wet Ingredients

  • 1/3 Cup Vegetable Oil
  • 1 Egg
  • 1/2 Tsp Vanilla Extract
  • 1/3 Cup Milk

Add-ins

  • 1 Cup Fresh Blueberries
  • 8 Silicone Cupcake Liners

Instructions

  1. Mix Dry Ingredients: In a medium-sized bowl, whisk together the all-purpose flour (or gluten-free flour), granulated sugar, salt, and baking powder until evenly combined.
  2. Add Wet Ingredients: Whisk in the vegetable oil, egg, vanilla extract, and milk until the batter is smooth and well incorporated without overmixing.
  3. Fold in Blueberries: Gently fold the fresh blueberries into the batter to evenly distribute them without breaking them up too much.
  4. Prepare Liners: Place 8 silicone cupcake liners in your air fryer basket or on a tray and fill each liner all the way to the top with the batter for full-sized muffins.
  5. Air Fry Muffins: Set the air fryer to 350°F (175°C) and cook the muffins for 10 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Repeat: Let the muffins cool for 2-3 minutes before carefully removing them from the liners. Repeat the cooking process with remaining batter if making multiple batches.
  7. Serve: Serve the warm blueberry muffins immediately or allow them to cool further for storage or later enjoyment.

Notes

  • Use fresh blueberries for best results; frozen can be used but may alter the batter consistency slightly.
  • Silicone cupcake liners are recommended to prevent sticking and promote even cooking in the air fryer.
  • Check muffin doneness with a toothpick to avoid under or overcooking.
  • Adjust cooking times slightly depending on your air fryer model and size.
  • These muffins freeze well; store cooled muffins in an airtight container or freezer bag.
