Arroz Con Leche Colombiano is a creamy, comforting Colombian rice pudding made with white rice, whole milk, condensed milk, and heavy cream, flavored with cinnamon. This traditional dessert is gently simmered until the rice is tender and the mixture thickens to a luscious consistency, perfect for serving warm or chilled.

Ingredients

Rice Pudding Base

  • 150 grams white rice (3/4 cup)
  • 600 ml whole milk (2 1/2 cups)
  • 2 cinnamon sticks

Add-ins

  • 100 grams condensed milk (approximately 1/3 cup)
  • 150 grams heavy cream (approximately 2/3 cup)

Garnish

  • Cinnamon powder, to taste

Instructions

  1. Combine Ingredients: Add the white rice, whole milk, and cinnamon sticks into a pot and bring the mixture to a boil over medium-high heat.
  2. Simmer the Rice: Once boiling, reduce the heat to low, cover the pot, and let it simmer gently for 20 to 30 minutes until the rice becomes soft. Stir the mixture regularly to prevent sticking and to avoid the formation of milk skin by removing it if it develops on the surface.
  3. Add Cream and Sweeten: Turn off the heat and stir in the heavy cream and condensed milk. Taste the pudding and add more condensed milk if you desire a sweeter flavor.
  4. Cool and Serve: Allow the rice pudding to cool to room temperature, during which it thickens. Serve in small cups and sprinkle with ground cinnamon on top before enjoying.

Notes

  • Stir the rice pudding regularly during simmering to prevent it from sticking to the pot.
  • Removing the milk skin helps achieve a smoother texture.
  • You can adjust the sweetness by adding more or less condensed milk according to your preference.
  • For a chilled dessert, refrigerate the pudding for a few hours before serving.
