Tender and flavorful Asian-style short ribs cooked quickly in a pressure cooker, infused with a rich blend of hoisin, soy sauce, garlic, ginger, and spices for a deliciously comforting meal perfect for any occasion.

Ingredients

Main Ingredients

  • 1 tablespoon vegetable oil
  • 4 garlic cloves, minced
  • 1 2-inch piece ginger, peeled, sliced into 1/4-inch-thick rounds, and smashed
  • 1/2 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons dry sherry
  • 4 scallions, white parts chopped coarse, green parts sliced thin
  • 1/4 teaspoon cayenne pepper
  • 6 8-ounce boneless beef short ribs, trimmed
  • 2 tablespoons fresh cilantro, minced

Instructions

  1. Build flavor: Heat vegetable oil in the pressure-cooker pot over medium-high heat. Add minced garlic and smashed ginger slices, and cook until fragrant, about 1 minute.
  2. Add sauce and aromatics: Stir in hoisin sauce, soy sauce, dry sherry, chopped white parts of the scallions, and cayenne pepper. Mix well to combine.
  3. Add beef: Place the trimmed boneless beef short ribs into the pot, ensuring they are coated with the sauce mixture.
  4. Pressure cook: Lock the pressure-cooker lid in place. Bring the pot to high pressure over medium-high heat, then reduce heat to medium-low to maintain high pressure. Cook for 35 minutes.
  5. Natural pressure release: Remove the pot from heat and allow pressure to release naturally for 15 minutes. After that, carefully quick release any remaining pressure and remove the lid, avoiding steam burns.
  6. Rest the ribs: Transfer the short ribs to a serving platter and tent loosely with aluminum foil. Let them rest while you finish the sauce.
  7. Finish the sauce: Strain the cooking liquid into a fat separator and let it sit for 5 minutes to separate the fat. Pour the defatted sauce into a small bowl.
  8. Serve: Stir the sliced green parts of scallions and minced fresh cilantro into the sauce. Serve this flavorful sauce alongside the short ribs.

Notes

  • Use boneless short ribs for faster, even cooking; bone-in ribs require longer cooking times.
  • Adjust cayenne pepper to control heat level according to your preference.
  • Allowing the pressure to release naturally helps keep the meat tender and juicy.
  • Defatting the sauce enhances the flavor without excess greasiness.
  • Serve with steamed rice or vegetables for a complete meal.
