Authentic Pico de Gallo is a fresh and flavorful Mexican salsa made with ripe tomatoes, crisp onions, spicy jalapeno, aromatic cilantro, and tangy lime juice. This versatile condiment is perfect as a topping for tacos, burritos, and nachos or simply enjoyed with tortilla chips.

Ingredients

Ingredients

  • 1 lb Roma tomatoes (3-4 medium), diced
  • 1/2 medium white onion (about 1 cup chopped), or yellow or red onion
  • 1 jalapeno pepper, seeded and finely minced (optional)
  • 1/2 cup cilantro, chopped
  • 2 Tbsp lime juice (from 1 lime)
  • 1/2 tsp salt, or to taste
  • 1/8 tsp black pepper

Instructions

  1. Combine Ingredients: In a medium bowl, add the diced Roma tomatoes, chopped onion, minced jalapeno pepper, and chopped cilantro.
  2. Season: Stir in 2 tablespoons of fresh lime juice, then add 1/2 teaspoon salt and 1/8 teaspoon black pepper. Mix thoroughly to evenly distribute the flavors.
  3. Serve or Store: Enjoy the Pico de Gallo immediately as a fresh salsa, or cover and refrigerate overnight to let the flavors meld. If storing, transfer to an airtight container and keep refrigerated for up to 3 days. Drain any excess liquid before serving if preferred.

Notes

  • To store Pico de Gallo, transfer to an airtight container and refrigerate leftovers for up to 3 days.
  • You can drain any excess liquid before serving if desired to avoid sogginess.
  • Adjust the jalapeno quantity or omit it for milder flavor.
  • Use fresh limes for best citrus flavor.
