These Air Fryer Avocado Eggs are a quick, healthy, and delicious breakfast option. Creamy avocado halves are filled with eggs, lightly seasoned, and cooked perfectly in the air fryer to achieve either a runny or firm yolk in just minutes.

Ingredients

Ingredients

  • 1 ripe avocado
  • 2 large eggs
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Optional: shredded cheese for topping

Instructions

  1. Preheat Air Fryer: If your air fryer requires preheating, set it to 350°F (175°C) and let it heat up while you prepare the avocado halves.
  2. Prepare Avocado: Cut the avocado in half lengthwise and carefully remove the seed. To ensure the halves sit flat in the air fryer basket, slice a small sliver off the bottom of each half to create a stable base.
  3. Scoop Extra Avocado: Using a spoon, scoop out a little extra avocado from each half to enlarge the cavity so it can comfortably hold the egg.
  4. Arrange in Air Fryer: Place the avocado halves in the preheated air fryer basket, making sure they are stable and won’t tip over when you add the eggs.
  5. Add Eggs: Crack one egg into each avocado half, being careful not to spill the whites outside the cavity.
  6. Season and Add Cheese: Sprinkle the salt and black pepper evenly over the eggs inside the avocados. If you like, add a small amount of shredded cheese on top for extra flavor and richness.
  7. Air Fry: Cook the avocado eggs in the air fryer at 350°F for 5-6 minutes if you prefer a runny yolk, or 6-7 minutes if you like a firmer, fully cooked yolk.

Notes

  • Make sure the avocado halves are very ripe but firm enough to hold their shape when air frying.
  • Adjust cooking time based on your air fryer model as air fryers can vary in heat intensity.
  • You can customize toppings with herbs, bacon bits, or hot sauce after cooking for added flavor.
  • Use fresh eggs for the best texture and flavor.
  • Let cool for a minute before eating to avoid burning yourself on the hot egg.
