A vibrant and healthy Avocado Lentil Salad with a zesty Cilantro Curry Dressing. This quick, no-cook salad combines nutritious lentils, fresh vegetables, and creamy avocado, all tossed in a flavorful curry-spiced dressing, perfect for a light lunch or side dish.

Ingredients

Salad Ingredients

  • 1 pound pre-cooked lentils (store-bought steamed lentils)
  • 1 cup diced carrots (about 2 carrots)
  • 1 cup diced cucumbers (about 2 to 3 Persian cucumbers)
  • 1 diced yellow, orange, or red bell pepper (about 1 cup)
  • ¼ red onion (diced)
  • 1 avocado (diced)

Dressing Ingredients

  • 1 cup cilantro
  • ⅓ cup olive oil
  • 2 tbsp lime juice
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey or maple syrup (use maple syrup to keep vegan)
  • 1 tsp spicy brown mustard
  • 1 tsp curry powder
  • ½ tsp sea salt
  • ¼ tsp black pepper

Instructions

  1. Prepare the Dressing: Add the cilantro, olive oil, lime juice, apple cider vinegar, honey or maple syrup, spicy brown mustard, curry powder, sea salt, and black pepper to a high-sided container and blend using an immersion blender until smooth. Alternatively, blend all ingredients in a regular blender until well combined.
  2. Combine Salad Ingredients: In a large bowl, add the pre-cooked lentils, diced carrots, diced cucumbers, diced bell pepper, and diced red onion. Mix gently to combine.
  3. Toss Salad with Dressing: Pour the prepared cilantro curry dressing over the lentil and vegetable mixture. Toss the salad gently to ensure everything is evenly coated with the dressing.
  4. Add Avocado: Carefully fold in the diced avocado to the salad, taking care not to mash it. Serve immediately or chill briefly before serving.

Notes

  • Use maple syrup instead of honey to make this salad vegan.
  • Pre-cooked lentils save time; you can cook dry lentils ahead if preferred.
  • For extra texture, sprinkle some toasted nuts or seeds on top before serving.
  • Chilling the salad for 10-15 minutes before serving enhances the flavors.
  • Leftovers can be stored in the refrigerator for up to 2 days; add avocado fresh when serving to prevent browning.
