Delicious and fluffy banana waffles made from scratch, combining ripe bananas with warm cinnamon and brown sugar for a perfect breakfast treat. These waffles are crispy on the outside and tender on the inside, ready in just 25 minutes and ideal for serving a crowd.

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour (spooned and leveled)
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 4 tablespoons brown sugar (use more or less to taste)
  • 1 teaspoon cinnamon (use more or less to taste)

Wet Ingredients

  • 2 large eggs
  • 6 tablespoons melted butter (3 oz / 85 grams)
  • 1½ cups milk
  • 3 teaspoons vanilla extract
  • 2 ripe bananas (about 200 grams), mashed

Other

  • Cooking spray (for the waffle iron)

Instructions

  1. Get prepped. Preheat your waffle iron to the recommended temperature. Peel and mash the 2 ripe bananas in a small bowl until smooth with no large chunks.
  2. Mix the dry ingredients. In a large bowl, whisk together the flour, salt, baking powder, brown sugar, and cinnamon to ensure even distribution of ingredients.
  3. Mix the wet ingredients. In a separate bowl, whisk the eggs, melted butter, milk, vanilla extract, and mashed bananas until the mixture is smooth and combined.
  4. Make the batter. Pour the wet ingredients into the dry ingredients and stir gently until just combined. The batter will be thick and slightly lumpy—this is expected and ensures tender waffles.
  5. Cook the waffles. Lightly spray the waffle iron with cooking spray to prevent sticking. Pour enough batter to fill the waffle iron surface just right, then cook until the waffles are golden brown and slightly crispy around the edges, typically about 4 to 6 minutes depending on your waffle iron.
  6. Serve. Remove waffles carefully and serve warm topped with maple syrup, whipped cream, sliced bananas, or a dusting of powdered sugar as desired.

Notes

  • Ensure bananas are ripe for maximum sweetness and flavor.
  • Do not overmix the batter to avoid tough waffles.
  • Waffle cook time may vary by appliance—adjust as needed.
  • Waffles can be kept warm in a low oven (200°F / 93°C) while cooking remaining batches.
  • For a dairy-free option, substitute milk and butter with plant-based alternatives.
