Berry Croissant Bake is a delightful breakfast casserole combining buttery baked croissants, a medley of fresh berries, and a creamy, sweetened cheese custard. Reminiscent of a Danish pastry, this make-ahead dish is perfect for warm mornings or brunch gatherings, providing a golden, fluffy, and flavorful treat that’s easy to prepare and serve.

Ingredients

Croissants and Berries

  • 4 large croissants, broken into small pieces (already baked croissants, not dough)
  • 1 cup sliced strawberries
  • ½ cup blueberries
  • ½ cup raspberries

Cream Cheese Mixture

  • 1 block (8 ounces) cream cheese, softened
  • 2/3 cup granulated sugar
  • 3/4 cup milk
  • 2 large eggs
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat and Prepare Baking Dish: Preheat your oven to 350°F (175°C). Lightly spray a 9x9-inch baking dish with cooking spray to prevent sticking.
  2. Layer Croissants and Berries: Evenly spread the broken croissant pieces across the bottom of the prepared baking dish. Distribute the sliced strawberries, blueberries, and raspberries evenly over the croissants to create a colorful berry layer.
  3. Make Cream Cheese Mixture: Using an electric mixer, beat the softened cream cheese until fluffy and smooth. Gradually add the granulated sugar, milk, eggs, and vanilla extract, mixing well until all ingredients are thoroughly combined into a creamy custard.
  4. Combine Layers and Soak: Pour the cream cheese mixture evenly over the croissants and berries in the baking dish. Cover the dish and refrigerate for at least 15 minutes or up to 14 hours to allow the croissants to soak up the custard fully.
  5. Bake the Casserole: Remove the cover and bake the dish in the preheated oven for 35 to 40 minutes until the top is golden brown and the custard has set completely.
  6. Serve Warm: Let the bake cool slightly before serving. Optionally garnish with powdered sugar or syrup, and enjoy this warm, indulgent breakfast treat.

Notes

  • Use fully baked croissants for best texture and flavor, not raw croissant dough.
  • Make ahead - the casserole can be assembled the night before and refrigerated until baking.
  • For extra flavor, consider adding a sprinkle of cinnamon or a handful of chopped nuts on top before baking.
  • Serve with syrup or powdered sugar for added sweetness if desired.
  • Leftovers can be refrigerated and reheated in the oven or microwave.
