This BEST Berry Sauce Recipe is a simple, quick, and versatile homemade sauce made with mixed berries, lemon juice, sugar, and optional vanilla extract. Perfect for topping pancakes, waffles, cheesecakes, yogurt, or ice cream, this sauce combines the natural sweetness and tartness of berries simmered to a syrupy consistency. Whether you prefer chunky or smooth textures, this berry sauce is easy to customize and delightful to enjoy warm or at room temperature.

Ingredients

Berry Sauce Ingredients

  • 3 cups (1 lb / 16 oz / 454 g) mixed berries (fresh or frozen)
  • ½ tablespoon lemon juice (can substitute lime juice)
  • 5 tablespoons (63 g) granulated sugar (brown sugar can be used as an alternative)
  • ½ teaspoon vanilla extract (optional)

Instructions

  1. Add Ingredients & Mix. Place 3 cups of mixed berries, ½ tablespoon lemon juice, and 5 tablespoons sugar into a medium saucepan. There is no need to thaw frozen berries; add them directly. Stir the mixture gently to combine the ingredients evenly.
  2. Cook the Berries. Heat the saucepan over medium heat. Stir occasionally until the berry mixture starts to gently boil, which will take about 5 to 6 minutes for frozen berries (fresh berries may boil faster). The berries will release their juices naturally, no need to add water.
  3. Simmer and Mash. Once boiling, reduce heat to low and let the mixture simmer. Occasionally stir and gently mash some of the berries with a ladle, fork, potato masher, or spoon to release juices and create the desired texture. Simmer for 10 to 12 minutes until the sauce becomes syrupy and slightly thickened.
  4. Add Vanilla Extract. Turn off the heat and stir in ½ teaspoon vanilla extract for aroma and flavor, if using.
  5. Adjust Consistency (Optional). If you want a thicker sauce, mix ½ tablespoon cornstarch with 1 tablespoon water to create a slurry and stir it into the sauce, cooking a little longer until thickened. For a thinner sauce, add a few tablespoons of water and simmer to desired consistency.
  6. Serve or Blend. Serve the sauce as is with berry chunks and syrup, warm or at room temperature. Alternatively, use an immersion blender, food processor, or regular blender (cool first if using a regular blender) to blend the sauce. You can strain it for a smooth syrupy texture or serve with berry bits.
  7. Enjoy. Use this berry sauce to top pancakes, waffles, Greek yogurt, cheesecakes, ice cream, or any dessert you prefer. The warm sauce paired with cold ice cream is especially delicious.

Notes

  • You do not have to defrost frozen berries before cooking.

  • To thicken the sauce faster, add a cornstarch slurry.
  • To thin the sauce, add water and simmer until desired consistency.
  • This sauce works well warm or at room temperature.
  • Blending and straining can be done for a smooth texture if preferred.
