This Breakfast Berry Crisp is a wholesome and delicious way to start your day, combining mixed berries with a crunchy, nutritious oat and seed topping. Baked until bubbly and golden, it pairs perfectly with a dollop of Greek yogurt for an extra protein boost and a dessert-like morning treat.

Ingredients

Fruit Base

  • 4 cups mixed berries (frozen blend of raspberries, strawberries, and blueberries)
  • 2 tbsp chia seeds
  • 1/8 tsp fine sea salt

Topping

  • 1 and 1/3 cups large flake rolled oats
  • 2 tbsp ground flaxseed
  • 2 tbsp hemp seeds
  • 2 tbsp unsweetened coconut flakes
  • 1/2 tsp ground cinnamon
  • 1/8 tsp fine sea salt

Binding and Sweetener

  • 1/4 cup almond butter
  • 2 tbsp maple syrup (or honey), plus additional to taste
  • 1 large egg white (about 2 tbsp)

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C) and prepare a 7x11 inch or similarly sized baking dish for the crisp.
  2. Prepare Fruit Layer: In the baking dish, mix the mixed berries together with chia seeds and 1/8 teaspoon of fine sea salt to evenly coat the fruit mixture.
  3. Make the Crisp Topping: In a separate bowl, combine the dry ingredients for the topping — rolled oats, ground flaxseed, hemp seeds, coconut flakes, ground cinnamon, and 1/8 teaspoon fine sea salt. Add almond butter, maple syrup, and the egg white, then mix thoroughly until the mixture holds together well.
  4. Assemble and Bake: Sprinkle the prepared topping evenly over the berry mixture in the baking dish. Bake in the preheated oven for 40 to 45 minutes, or until the topping is lightly golden and crisp, and the fruit filling is bubbly around the edges.
  5. Serve: Remove from the oven and let it cool slightly. Serve warm, optionally topped with Greek yogurt to add creaminess and extra protein, resembling a dessert-like crisp with a healthy twist.

Notes

  • Use fresh or frozen mixed berries depending on availability; frozen berries work great and can be used frozen directly.
  • Maple syrup can be substituted with honey for a different flavor profile.
  • For a nut-free version, substitute almond butter with seed butter such as sunflower seed butter.
  • Leftovers can be refrigerated for up to 3 days and reheated before serving.
  • Adding Greek yogurt on the side enhances the protein content and adds a creamy texture.
