These delicious breakfast potatoes are a perfect side dish that can easily steal the show from bacon. Tender, sautéed russet potatoes combined with sweet red bell pepper and fresh scallions create a flavorful and hearty start to your day.

Ingredients

Potatoes

  • 2 lb. russet potatoes, peeled and quartered
  • 1 tablespoon water

Vegetables & Seasonings

  • 1 small red bell pepper, chopped
  • 1 1/4 tsp. kosher salt
  • 3/4 tsp. garlic powder
  • 1/2 tsp. black pepper
  • 1/2 cup sliced scallions

Oil

  • 1/4 cup olive oil

Instructions

  1. Steam the Potatoes: Place the peeled and quartered potatoes in a large microwave-safe bowl and drizzle with 1 tablespoon of water. Cover the bowl tightly with plastic wrap and pierce once to allow steam to vent. Microwave on High for 6 to 7 minutes until the potatoes are almost tender. Unwrap carefully and let cool slightly for about 15 minutes or prepare a day ahead and refrigerate.
  2. Chop Potatoes: Once cooled, cut the potatoes into 1/2- to 3/4-inch cubes. The potatoes will be slightly sticky and starchy, which will help them brown nicely.
  3. Sauté and Brown Potatoes and Peppers: Heat 1/4 cup of olive oil in a large skillet over medium-high heat. Add the cubed potatoes, chopped red bell pepper, kosher salt, garlic powder, and black pepper. Sauté the mixture, stirring every 3 minutes, until the potatoes are browned and tender, approximately 10 minutes.
  4. Add Scallions: Stir in the sliced scallions and cook for an additional 2 minutes to soften and combine the flavors.

Notes

  • You can steam the potatoes a day ahead and refrigerate to save time in the morning.
  • Be sure to stir the potatoes regularly while sautéing to achieve even browning without burning.
  • If you prefer a crisper texture, cook the potatoes a little longer, but watch closely to avoid overcooking.
  • These potatoes are versatile and can be customized with additional herbs like rosemary or thyme if desired.
