Ingredients

Buffalo Chicken Filling

  • 3 cups shredded chicken
  • 1/2 cup hot sauce (such as Frank's)
  • 1 cup shredded mozzarella cheese or cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cracked black pepper

Other Ingredients

  • 12 tortillas (corn or flour, see notes)
  • Avocado oil spray or cooking oil spray

Instructions

  1. Preheat the Cooking Equipment: For air fryer method, preheat your air fryer to 400ºF and spray the basket with avocado oil cooking spray. For oven method, preheat your oven to 400ºF and line a rimmed baking sheet with parchment paper lightly brushed with oil.
  2. Prepare the Filling: In a medium bowl, combine the shredded chicken, hot sauce, shredded cheese, garlic powder, and cracked black pepper. Mix thoroughly until evenly combined.
  3. Warm the Tortillas: Heat tortillas briefly in a hot cast-iron skillet or microwave for a few seconds until they become flexible and easy to roll without cracking.
  4. Assemble the Taquitos: Place one warmed tortilla on a flat surface. Spoon about 1/4 cup of the chicken mixture onto one side of the tortilla. Roll it up tightly around the filling. For air fryer method, spray the seam with avocado oil spray and place seam side down on a baking sheet or cutting board. Repeat with remaining tortillas and filling.
  5. Cook the Taquitos: For air fryer, place the taquitos seam side down in the basket and cook in batches for 6 minutes, flipping halfway through, until the tortillas are lightly crispy and the filling is melted. For oven, arrange the rolled taquitos seam side down on the prepared baking sheet. Lightly brush or spray the tops with oil. Bake on the lowest oven rack for 15 to 20 minutes, flipping halfway through, until crisp and melty.
  6. Serve: Serve hot with optional garnishes such as chopped lettuce, diced tomato, ranch or blue cheese dressing, fresh cilantro, and extra hot sauce for dipping or drizzling.

Notes

  • Warm tortillas before rolling to prevent cracking and ensure they roll nicely.
  • Use your preferred type of tortillas—corn or flour—based on taste and texture preference.
  • Avocado oil spray helps to crisp the taquitos nicely in the air fryer or oven.
  • Adjust the amount of hot sauce to control the spice level of the filling.
  • These taquitos are best served immediately while crispy but can be reheated in the air fryer or oven to restore crispness.
