Cabbage Fat-Burning Soup is a nutritious, low-calorie soup packed with fresh vegetables and aromatic herbs. Perfect for those looking to lose weight while enjoying a flavorful meal, this soup combines cabbage, carrots, celery, and bell pepper simmered in a fragrant vegetable broth with tomato and lemon juice for a refreshing and healthy dish.

Ingredients

Vegetables

  • 1 medium head cabbage (about 2 pounds), chopped into bite-sized pieces
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 stalks celery, sliced
  • 1 bell pepper, chopped
  • 1 can (14.5 ounces) diced tomatoes with juice

Liquids & Seasonings

  • 6 cups low-sodium vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon black pepper, to taste
  • 1 teaspoon salt, to taste
  • Juice of 1 lemon
  • 1 tablespoon oil (for sautéing)

Instructions

  1. Prepare the vegetables: Start by washing and chopping the cabbage into small bite-sized pieces. Chop the onion, slice the carrots and celery, mince the garlic, and chop the bell pepper. Set all prepared vegetables aside.
  2. Sauté aromatics: Heat 1 tablespoon of oil in a large pot over medium heat. Add the chopped onion and minced garlic and sauté for about 3-4 minutes until they become soft and fragrant, ensuring the flavors develop well.
  3. Add remaining vegetables: Add the chopped cabbage, sliced carrots, celery, and chopped bell pepper to the pot. Stir and cook for 5 minutes, allowing the vegetables to slightly soften.
  4. Add liquids and herbs: Pour in the 6 cups of low-sodium vegetable broth and the canned diced tomatoes with their juice. Stir in the dried oregano, dried basil, salt, and black pepper. Bring the mixture to a boil.
  5. Simmer the soup: Once boiling, reduce the heat to low and cover the pot. Let the soup simmer gently for about 25-30 minutes until all the vegetables are tender and the flavors have fully melded together.
  6. Finish with lemon juice: After simmering, remove the pot from heat and stir in the juice of one lemon to brighten and enhance the soup’s flavors.
  7. Serve: Ladle the hot cabbage soup into bowls and serve immediately. This hearty, healthy soup can be enjoyed on its own or as part of a balanced meal.

Notes

  • Use low-sodium vegetable broth to control the salt content and keep the soup heart-healthy.
  • For extra protein, add cooked beans or shredded chicken.
  • The soup keeps well in the fridge for up to 4 days and freezes nicely for meal prep.
  • Adjust seasoning to taste, especially salt and lemon juice, depending on personal preference.
  • To make it vegan, ensure the broth used is vegetable-based and oil is plant-based.
