Ingredients

Salad Ingredients

  • 2 cups Arugula
  • 1/2 lb Farfalle Pasta (cooked and cooled)
  • 12 oz Heirloom Cherry Tomatoes (halved)
  • 1/2 cup Roasted Red Peppers (chopped)
  • 1/2 cup Pink Pickled Onions
  • 8 oz Mini Mozzarella Pearls
  • 1/2 cup Basil (roughly chopped)

Dressing Ingredients

  • 1/3 cup Garlic Expressions (garlic infused oil or dressing)
  • 1/4 cup White Balsamic Vinegar
  • 1 clove Garlic (grated or minced)
  • Flaky Salt and Pepper to taste

Instructions

  1. Combine Ingredients: In a large bowl, add the arugula, cooked and cooled farfalle pasta, halved heirloom cherry tomatoes, chopped roasted red peppers, pink pickled onions, mini mozzarella pearls, and roughly chopped basil.
  2. Make Dressing and Toss: Pour in the garlic expressions and white balsamic vinegar. Add the grated or minced garlic clove. Toss all ingredients thoroughly to evenly coat the salad with the dressing.
  3. Season and Adjust: Taste the salad and add flaky salt and freshly ground black pepper as needed to enhance flavor.
  4. Store: Transfer the salad to an airtight container and refrigerate. It can be stored for up to 4 days, allowing flavors to meld and develop.

Notes

  • For best texture, cook the pasta al dente and cool completely before tossing to prevent sogginess.
  • This salad is perfect for meal prep or potlucks as it keeps well refrigerated.
  • Feel free to substitute mini mozzarella pearls with fresh bocconcini or diced mozzarella.
  • If pink pickled onions are unavailable, substitute with thinly sliced red onions marinated briefly in vinegar and sugar.
  • Adjust garlic amount based on preference for a milder or stronger garlic flavor.
