This classic caramelized onions recipe guides you through transforming simple sliced onions into sweet, golden, deeply flavored caramelized onions. Using butter, fresh thyme, and optional brown sugar or balsamic vinegar for enhanced sweetness and complexity, these onions are perfect to elevate burgers, steaks, sandwiches, or savory dishes.

Ingredients

Ingredients

  • 1 lb brown or white onions, sliced
  • ½ stick unsalted butter (4 tablespoons)
  • Salt, to taste
  • 2 sprigs fresh thyme (optional)
  • ½ teaspoon brown sugar (optional)
  • ¼ teaspoon balsamic vinegar (optional)

Instructions

  1. Heat the pan: Place a large non-stick frying pan, shallow casserole, or skillet over medium-high heat. Add the butter and allow it to melt completely until it is frothy.
  2. Add onions and thyme: Add the sliced onions to the pan. Sprinkle with salt and add the fresh thyme sprigs if using. Once the onions start sizzling, reduce the heat to medium.
  3. Initial cooking: Cook the onions for about 30 minutes, stirring occasionally. The onions will become soft during this stage but may not have much color yet, so patience is key.
  4. Caramelize onions: Increase the heat back to medium-high and cook for another 15-20 minutes, stirring frequently. During this stage, you can add either brown sugar or balsamic vinegar (but not both) at the beginning to enhance sweetness and depth of flavor. Continue cooking until the onions turn light golden and are fully soft and caramelized.

Notes

  • Use a large pan to allow even cooking and avoid overcrowding the onions.
  • Stirring occasionally during the first 30 minutes prevents burning and uneven cooking.
  • Do not add both brown sugar and balsamic vinegar as it may overpower the natural onion flavor.
  • Caramelized onions can be stored in an airtight container in the refrigerator for up to one week.
  • Remove fresh thyme sprigs before serving.
