A refreshing and tangy Catalina Pasta Salad featuring rotini pasta, fresh green pepper, apple, tomato, and red onion, all tossed in a zesty Catalina dressing. Perfect as a light lunch or a side dish for picnics and barbecues.

Ingredients

Pasta

  • 3 Cups uncooked Rotini Pasta (or any pasta of your choosing)

Vegetables & Fruits

  • 1/2 Green pepper, diced
  • 1/2 Royal gala apple, chopped
  • 1/2 Tomato, chopped
  • 1/4 Red onion, diced

Dressing

  • 1/2 Cup Catalina dressing

Instructions

  1. Cook the pasta: Cook the rotini pasta following the package instructions until al dente. Drain the pasta and rinse thoroughly under cold water to stop the cooking process and cool it down. Set aside to drain completely.
  2. Prepare fresh ingredients: While the pasta cooks, dice the green pepper, chop the royal gala apple, tomato, and red onion, and add them into a large mixing bowl.
  3. Combine pasta and veggies: Once the pasta has cooled and drained, add it to the mixing bowl with the prepared fruit and vegetables.
  4. Add dressing: Pour the Catalina dressing over the pasta and vegetables.
  5. Mix and chill: Mix all ingredients well to coat evenly with the dressing. Transfer to the refrigerator and let it chill for at least one hour before serving to allow the flavors to meld.

Notes

  • For best flavor, prepare the salad at least an hour in advance and keep refrigerated.
  • You can substitute rotini with other pasta shapes like penne or fusilli.
  • Adjust the amount of Catalina dressing according to your taste preference.
  • Add protein such as grilled chicken or bacon bits for a more filling salad.
  • Keep the apple from browning by tossing it in a little lemon juice before adding.
