These Cheddar Muffins are a quick and savory baked treat perfect for breakfast or as a snack. Made with sharp Cheddar cheese, tender all-purpose flour, and a hint of sweetness from sugar, these muffins come together in just 30 minutes and deliver a golden, cheesy bite every time.

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour (spooned and leveled)
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon kosher salt
  • 2 1/2 cups grated Cheddar cheese

Wet Ingredients

  • 1 large egg
  • 1 cup milk
  • 6 tablespoons butter, melted

Instructions

  1. Prep. Preheat your oven to 400º F (200º C). Lightly spray a 12-cup muffin tin with baking spray or grease it well to prevent sticking, then set it aside while you prepare the batter.
  2. Whisk dry ingredients. In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, and kosher salt. Whisk them together thoroughly to ensure even distribution. Add the grated Cheddar cheese, and gently toss it with the flour mixture to coat the cheese evenly—this helps prevent the cheese from sinking during baking.
  3. Mix wet ingredients. In a separate small bowl, whisk together the egg, milk, and melted butter until smooth. Pour this wet mixture into the bowl with the dry ingredients and stir gently until just combined. Avoid overmixing to keep the muffins tender and light.
  4. Bake and serve. Spoon the combined batter evenly into the prepared muffin tin cups. Place the tin in the preheated oven and bake for 20 to 25 minutes, or until the muffins turn golden brown on top and a toothpick inserted into the center comes out clean. Once done, remove from the oven and allow to cool slightly before serving warm for the best flavor and texture.

Notes

  • For extra flavor, consider adding a pinch of smoked paprika or garlic powder to the dry ingredients.
  • You can substitute the all-purpose flour with gluten-free flour if needed, but texture may vary slightly.
  • Store leftover muffins in an airtight container at room temperature for up to 2 days or freeze for longer storage.
  • Serve these muffins warm with butter or alongside soups and salads for a delicious meal addition.
  • To make the muffins lighter, use low-fat milk and reduce butter to 4 tablespoons, keeping texture in mind.
