Cheese Eggs Bread is a warm and comforting Georgian-inspired bread boat filled with ooey-gooey mozzarella, salty feta, and a perfectly cooked egg in the center. This dish offers a delightful blend of soft bread, melty cheese, and a creamy egg yolk, making it an ideal choice for brunch or a cozy dinner treat.

Ingredients

Dough

  • 2 cups all-purpose flour
  • 3/4 cup warm water
  • 2 1/4 teaspoons active dry yeast
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil

Filling

  • 1 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 2 large eggs
  • 1 tablespoon melted butter

Instructions

  1. Preheat Oven: Preheat your oven to 475°F (245°C) and place a baking sheet inside to heat up. This ensures the bread cooks evenly and develops a crisp crust.
  2. Activate Yeast: In a bowl, combine warm water, sugar, and yeast. Let it sit for 5–10 minutes until it becomes foamy, indicating the yeast is active and ready to use.
  3. Make Dough: Add flour, salt, and olive oil to the yeast mixture. Mix and knead the ingredients for about 8 minutes until a smooth and elastic dough forms.
  4. First Rise: Cover the dough with a damp towel and let it rise in a warm spot for 45 minutes until it doubles in size, which develops flavor and texture.
  5. Shape Dough Boats: Divide the risen dough in half and roll each into an oval shape. Fold the sides inward and pinch the ends to create a boat shape that will hold the filling.
  6. Add Cheese Filling: Mix the shredded mozzarella and crumbled feta together, then fill each dough boat evenly with this cheese mixture.
  7. Bake Cheese Boats: Place the filled boats on parchment paper and bake them on the preheated baking sheet for 12 minutes until the dough begins to turn golden and the cheese starts to melt.
  8. Add Eggs: Remove the boats from the oven and carefully crack one egg into the center of each boat. Return to the oven and bake for another 3–4 minutes, or until the egg whites are set but yolks remain soft for a creamy texture.
  9. Finish and Serve: Brush the crust of each bread boat with melted butter to add a rich flavor and glossy finish. Serve immediately while hot and enjoy the comforting combination of bread, cheese, and egg.

Notes

  • For a runnier egg yolk, reduce the second baking time to about 2-3 minutes.
  • You can substitute feta with goat cheese or ricotta for different flavor variations.
  • If you prefer, add herbs like oregano or thyme to the cheese mixture for additional aroma.
  • Ensure your oven is fully preheated to achieve the best crust texture.
  • To store leftovers, keep them wrapped tightly and reheat in the oven to maintain crust crispness.
