Ideal as a hearty side or satisfying main, it marries mellow sweetness with rich, savory flavors for an unforgettable baked delight.

Ingredients

Vegetables and Aromatics

  • 4 large leeks, thinly sliced (white and light green parts only)

Fats and Oils

  • 2 tablespoons olive oil
  • 2 tablespoons butter

Dairy and Eggs

  • 3 large eggs
  • 1 cup heavy cream
  • 1 ½ cups shredded cheddar cheese

Seasonings and Other

  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Pinch of nutmeg (optional)
  • ¼ cup breadcrumbs

Instructions

  1. Preheat oven: Set your oven to 375°F (190°C) and grease a loaf pan or small baking dish to prevent sticking and facilitate even cooking.
  2. Caramelise leeks: In a skillet over medium heat, sauté the thinly sliced leeks with olive oil and butter, stirring occasionally, until they turn golden brown and become soft, about 15 to 20 minutes, which develops their natural sweetness.
  3. Prepare leek mixture: Allow the cooked leeks to cool slightly, then in a large bowl combine them with eggs, heavy cream, shredded cheddar cheese, salt, black pepper, and an optional pinch of nutmeg, blending thoroughly to create a rich filling.
  4. Prepare baking dish: Sprinkle the base of the greased baking dish evenly with breadcrumbs to add a crunchy crust and prevent sticking.
  5. Assemble and bake: Pour the leek and cheese mixture into the prepared dish, smoothing the surface with a spatula. Place in the oven and bake for 35 to 40 minutes until the top is a beautiful golden brown and the center has set firmly.
  6. Cool and serve: Remove the dish from the oven and let it rest for 10 minutes, allowing it to set fully for easier slicing. Serve warm as a comforting main or side dish.

Notes

  • Letting the dish rest before slicing helps it set and maintain its shape, preventing it from falling apart.
  • Mixing different types of cheese, such as Gruyère or mozzarella, can enhance flavor complexity.
  • For an extra crispy and golden top, broil the baked dish for the last 2 to 3 minutes, watching closely to avoid burning.
