Cheesy Egg & Cheese Piroshki are delicious Eastern European breakfast pockets filled with a savory mixture of eggs and shredded cheese, wrapped in a tender, buttery dough and fried to golden perfection. These comforting bites are perfect for transforming simple meals into special occasions.

Ingredients

Dough

  • 2 cups All-Purpose Flour (Gluten-free flour can be used as a substitute)
  • 1 teaspoon Salt (Kosher salt will impart a different texture)
  • 1 teaspoon Baking Powder (Ensure it’s fresh for best results)
  • 4 tablespoons Unsalted Butter (Can substitute with margarine or vegan butter)
  • 1 large Egg (Flax egg can be used for vegan option)
  • 1 cup Sour Cream (Plain Greek yogurt works well as a substitute)

Filling

  • 2 cups Shredded Cheese (cheddar, mozzarella, or your favorite cheese)
  • 2 large Eggs (for filling; use just egg whites for a lighter version)
  • 1 teaspoon Black Pepper (White pepper can be used for milder flavor)
  • 1 tablespoon Chopped Fresh Herbs (optional: parsley or dill)

For Frying

  • Oil for Frying (consider baking for a healthier option)

Instructions

  1. Make the Dough: In a large mixing bowl, combine all-purpose flour, salt, and baking powder. Cut in softened unsalted butter until the mixture resembles coarse crumbs, ensuring even distribution of fat for a flaky texture.
  2. Add Wet Ingredients: Incorporate the large egg and sour cream into the dry mixture and stir until a rough dough forms, taking care not to overmix for a tender result.
  3. Chill Dough: Wrap the dough in plastic wrap and refrigerate for about 15 minutes to firm up the dough, making it easier to roll out and handle.
  4. Prepare Filling: In a mixing bowl, beat two large eggs, then fold in shredded cheese, black pepper, and optional fresh herbs to create the savory filling.
  5. Roll and Cut Dough: Remove the chilled dough and roll it out on a floured surface to about ¼ inch thickness. Use a round cutter to cut circles approximately 4 inches in diameter.
  6. Fill and Seal: Place a generous spoonful of filling in the center of each dough circle. Fold the dough over, creating a half-moon shape, and seal by pinching the edges together, optionally crimping for a decorative finish.
  7. Heat Oil and Fry: Heat oil in a large skillet over medium-high heat until it reaches 375°F (190°C). Fry each piroshki for 3-4 minutes on each side until golden brown and crispy. Alternatively, bake the piroshki for 20-25 minutes for a healthier version.
  8. Cool and Serve: Allow the piroshki to cool slightly on a wire rack before serving to preserve their crisp texture.

Notes

  • Chill the dough well before rolling it out to prevent stickiness and easy handling.
  • Avoid overfilling the piroshki to ensure they seal properly and cook evenly.
  • You can substitute gluten-free flour and vegan butter to accommodate dietary preferences.
  • For a lighter filling, use only egg whites instead of whole eggs.
  • Baking is a great alternative to frying for a healthier preparation.
