Ingredients

Spinach Filling

  • 1 ⅔ cup frozen spinach, thawed overnight in the fridge (247 g)
  • 6 oz cream cheese, softened (164 g)
  • 1/3 cup mayonnaise (80 g)
  • 1 1/2 cups shredded mozzarella cheese (132 g)
  • 3/4 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp fine sea salt
  • 1/4 tsp black pepper

Croissants and Topping

  • 8 butter croissants
  • 1 tbsp honey
  • 1 tbsp + 2 tsp everything but the bagel seasoning

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line two large baking sheets with parchment paper to prepare for baking the croissants.
  2. Prepare Spinach: Remove excess liquid from the thawed spinach by squeezing it between a stack of paper towels. This ensures your filling is not watery and holds together well.
  3. Mix Filling: In a medium bowl, combine the drained spinach, softened cream cheese, mayonnaise, shredded mozzarella, onion powder, garlic powder, sea salt, and black pepper. Stir well until all ingredients are fully incorporated into a creamy filling.
  4. Slice Croissants: Using a serrated knife, carefully slice each croissant about three-quarters of the way open, creating a pocket for the filling without cutting all the way through.
  5. Fill Croissants: Evenly distribute the spinach and cheese mixture into the croissant pockets using a spatula to ensure every croissant is generously stuffed.
  6. Prepare Honey and Seasoning: Warm the honey in the microwave until it becomes runny for easy drizzling. Mix the honey with the everything but the bagel seasoning to create a flavorful glaze.
  7. Glaze Croissants: Brush or drizzle the honey and everything bagel seasoning mixture over the tops of the filled croissants to add a savory, slightly sweet finish.
  8. Bake: Place the filled and glazed croissants on the prepared baking sheets. Bake in the preheated oven for about 8 minutes, or until the croissants are golden brown and the cheese filling is heated through and melty.
  9. Serve: Remove from the oven and allow to cool slightly before serving warm for a delicious breakfast or brunch treat.

Notes

  • Make sure to squeeze out all excess liquid from the thawed spinach to prevent soggy croissants.
  • Butter croissants work best for a rich, flaky texture but you can experiment with other croissant types if desired.
  • Adjust the amount of everything bagel seasoning to your taste preference for more or less crunch and flavor.
  • These croissants are best enjoyed fresh but can be reheated in the oven to restore crispness.
  • Substitute mayonnaise with Greek yogurt for a lighter filling option.
