Ingredients

Crust

  • 12 sheets Graham crackers (24 half-squares) to make 1 ½ cups Graham cracker crumbs
  • 3 tablespoons granulated sugar
  • ⅓ cup butter, melted

Filling

  • 8 ounces cream cheese, softened
  • ⅔ cup powdered sugar
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup whipping cream

Topping

  • 1 can cherry pie filling

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the crust.
  2. Prepare the Crust: Crush the Graham crackers into fine crumbs using a food processor or by placing them in a large ziplock bag and crushing with a rolling pin. Combine crumbs with sugar and melted butter until evenly moistened.
  3. Form the Crust: Pour the crumb mixture into a 9-inch pie pan. Press crumbs gently and evenly along the bottom and up the sides of the pan, using your hands, then the bottom of a measuring cup to smooth, and a spoon to create a curved seam for structural integrity.
  4. Set Edge of Crust: Use one finger to press the top edges gently while holding the sides to create a clean, neat line and remove any loose crumbs.
  5. Bake the Crust: Bake the crust in the preheated oven for 10 minutes. Remove and allow it to cool completely before adding the filling.
  6. Mix Cream Cheese Filling: In a medium bowl, beat the softened cream cheese until smooth and lump-free. Add powdered sugar, lemon juice, and vanilla, beating until combined.
  7. Whip Cream: In a separate bowl, whip the cream with an electric mixer until stiff peaks form.
  8. Combine Filling: Gently fold the whipped cream into the cream cheese mixture, using several strokes to maintain the airy texture.
  9. Fill the Crust: Pour the cream cheese filling into the cooled crust. Use a spatula to smooth the top evenly. Chill the pie in the refrigerator for at least 3 hours or overnight to set.
  10. Add Cherry Topping: Spoon the cherry pie filling over the set cream cheese layer. Chill for an additional hour or until ready to serve.

Notes

  • Use room temperature cream cheese for easier mixing and a smoother filling.
  • For best results, chill the pie overnight to allow layers to set properly.
  • The curved seam in the crust helps prevent separation when serving.
  • You can substitute cherry pie filling with other fruit fillings like blueberry or strawberry if desired.
  • Ensure whipped cream forms stiff peaks for the right texture in the filling.
