Chew Bread is a sweet, chewy treat made with brown sugar, butter, eggs, and a delightful mix of coconut, pecans, and raisins. Baked slowly at a low temperature to develop a golden crust and moist interior, this easy recipe yields finger-sized cookies perfect for snacking or sharing.

Ingredients

Wet Ingredients

  • 1 (1 lb.) box of light brown sugar
  • 1 stick of butter (1/2 cup), melted
  • 3 large eggs
  • 1 teaspoon pure vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt

Add-ins

  • 1 cup shredded unsweetened coconut
  • 1 cup pecans, roughly chopped
  • 1/2 cup raisins

Instructions

  1. Preheat and prepare baking dish: Preheat your oven to 300 degrees F. Lightly coat a 9x13 glass baking dish with cooking spray and set it aside to prepare for the batter.
  2. Mix wet ingredients: In a medium bowl, combine the brown sugar, melted butter, eggs, and vanilla extract. Whisk thoroughly until the mixture is smooth and fully incorporated.
  3. Add dry ingredients: Stir in the all-purpose flour, baking powder, and salt into the wet mixture until well combined. Then fold in the shredded coconut, chopped pecans, and raisins until evenly distributed.
  4. Spread batter in dish: Transfer the sticky batter to the prepared baking dish. Dampen your hands slightly with water to help press and spread the mixture evenly across the pan's surface.
  5. Bake: Place the baking dish in the oven and bake at 300 degrees F for about 45 minutes, or until the top turns a golden brown color.
  6. Cool and serve: Allow the baked mixture to cool completely in the dish. Once cooled, cut into finger-sized cookies. Store these treats covered at room temperature for up to 5 to 7 days.

Notes

  • Wetting your hands helps in spreading the sticky batter evenly without it clinging to your fingers.
  • Ensure the bread cools fully before slicing to maintain its chewy texture.
  • Store in an airtight container to keep the bread fresh for up to a week.
  • This recipe yields approximately 20 finger-sized pieces.
