This Chicken Shawarma recipe features tender boneless skinless chicken thighs marinated in a flavorful blend of spices and cooked to perfection in a skillet. Served with traditional Toum sauce, fresh vegetables, and Arabic-style pita, this dish delivers an authentic Middle Eastern experience that's easy to prepare at home in under 30 minutes.

Ingredients

For the Chicken Shawarma

  • 1½ pounds boneless skinless chicken thighs, thinly sliced
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 4 garlic cloves, minced
  • 1 teaspoon paprika
  • ¾ teaspoon salt
  • ½ teaspoon ground cardamom
  • ½ teaspoon ground cumin
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon crushed red pepper flakes

For Serving

  • Toum (garlic sauce)
  • Vegetables (such as tomatoes, cucumbers, onions, and lettuce)
  • Arabic-style pita bread

Instructions

  1. Marinate the Chicken: Pat the chicken thighs dry with paper towels. In a large bowl, whisk together olive oil, lemon juice, minced garlic, paprika, salt, cardamom, cumin, cinnamon, and crushed red pepper flakes. Add the sliced chicken to the bowl and gently toss to coat all pieces evenly. For more intense flavor, cover the bowl and refrigerate for up to 24 hours.
  2. Cook the Chicken: Heat a large heavy-bottomed skillet over medium-high heat. Add the marinated chicken in a single layer, allowing it to cook undisturbed for 8 minutes on one side to develop a nice sear. Then flip the chicken pieces and cook the other side, stirring occasionally, for an additional 4 to 7 minutes until the chicken is browned and cooked through.
  3. Serve: Transfer the cooked chicken shawarma to a serving platter. Serve hot alongside Toum garlic sauce, fresh vegetables, and warm Arabic-style pita bread for wrapping and enjoying.

Notes

  • For a juicier result, marinate the chicken overnight.
  • You can customize the vegetables according to your preference.
  • Use a heavy-bottomed skillet to ensure even cooking and prevent sticking.
  • Toum sauce is a traditional garlic sauce that complements the shawarma perfectly; it can be purchased or homemade.
  • To keep the dish gluten-free, substitute pita with gluten-free flatbread.
