Ingredients

Main Ingredients

  • 1 pound cucumbers, roughly chopped (about 4 cups) (peeled and seeded if desired)
  • 1 cup shelled cooked edamame (cooled)
  • ½ cup plain low-fat Greek yogurt (0% fat)
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice, plus more to taste
  • 1 small garlic clove
  • ¼ cup loosely packed fresh dill
  • ¼ cup loosely packed fresh mint
  • ½ teaspoon kosher salt, plus more to taste
  • ¼ teaspoon freshly ground black pepper
  • ¼-½ cup cold water, if needed to thin the soup

Optional Toppings

  • Additional fresh herbs
  • Extra olive oil
  • Additional lemon juice
  • Extra yogurt or crème fraîche (swirls or dollops)
  • Chopped pistachios
  • Chimichurri or pesto sauce
  • Toasted breadcrumbs
  • Crispy wasabi peas
  • Crunchy roasted edamame or chickpeas

Instructions

  1. Combine Ingredients: Add cucumbers, edamame, Greek yogurt, olive oil, lemon juice, garlic, fresh dill, fresh mint, kosher salt, and black pepper to a blender.
  2. Blend Smoothly: Blend the mixture until completely smooth and creamy. If the soup is too thick, gradually add cold water in small amounts until you reach your desired soup consistency.
  3. Season to Taste: Taste the soup and adjust seasoning by adding more salt, pepper, or lemon juice as desired to balance the flavors.
  4. Chill the Soup: Transfer the soup to a container and chill in the refrigerator for at least 1 hour, allowing flavors to meld and the soup to become well chilled.
  5. Serve with Toppings: Serve the chilled soup garnished with your choice of additional herbs, yogurt or crème fraîche swirls, chopped pistachios, chimichurri or pesto sauces, toasted breadcrumbs, or crunchy toppings like wasabi peas or roasted edamame for texture and flavor contrast.

Notes

  • Peeling and seeding cucumbers is optional but helps create a smoother, less bitter soup.
  • Adjust water quantity based on desired thickness; the soup should be creamy but spoonable.
  • Use low-fat Greek yogurt for a creamy texture with less fat.
  • Chilling the soup for at least an hour enhances the refreshing flavor and melds the herbs.
  • Experiment with different toppings for added texture and flavor variations.
  • This soup is best served cold and fresh but can be stored in the refrigerator for up to 2 days.
