These Chocolate Protein Balls are a delicious and nutritious snack, combining creamy cashew butter, chocolate protein powder, and crispy rice cereal for a satisfying crunch. Coated in a luscious dark chocolate mixture, they offer the perfect balance of protein and sweetness, ideal for a quick energy boost or post-workout treat.

Ingredients

Main Ingredients

  • 1/2 cup cashew butter
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup chocolate protein powder
  • 2 tbsp cocoa powder
  • 1/4 cup oat flour
  • 1/4 cup ground flax seed
  • Pinch of salt (about ⅛ tsp)

Chocolate Coating

  • 1 cup dark chocolate chips
  • 1 tsp coconut oil
  • 1/2 cup crispy rice cereal

Instructions

  1. Mix Wet Ingredients: In a large mixing bowl, whisk together the cashew butter, maple syrup, and vanilla extract until smooth and well combined.
  2. Add Dry Ingredients: Stir in the chocolate protein powder, cocoa powder, oat flour, ground flax seed, and pinch of salt. Use your hands if needed to ensure everything is fully incorporated into a uniform dough.
  3. Shape Balls: Divide the mixture into 13 equal-sized balls. Place them on a tray and freeze for about 5 minutes to firm up slightly.
  4. Melt Chocolate Coating: While the balls chill in the freezer, combine the dark chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until fully melted (approximately 1 minute 30 seconds).
  5. Mix in Cereal: Once melted, fold in the crispy rice cereal to the chocolate mixture, creating a crunchy coating.
  6. Coat Protein Balls: Using a spoon, coat each protein ball evenly with the chocolate and crispy rice mixture. This method helps minimize mess.
  7. Set and Store: Place the coated balls in the fridge to allow the chocolate to set completely. Store finished protein balls in an airtight container in the refrigerator.

Notes

  • Ground flax seed acts as a binding agent and adds omega-3 fatty acids.
  • Use a protein powder of your choice; chocolate flavor works best.
  • For a vegan version, ensure the protein powder and chocolate chips are plant-based.
  • Store the protein balls in the fridge to maintain freshness and firmness.
  • These can also be frozen for longer storage; thaw slightly before eating.
