Ingredients

Sauce Ingredients

  • 1 medium jalapeño
  • 1 cup lightly packed fresh cilantro (from 1 small bunch, slender stems are okay)
  • 1 cup sour cream
  • 1 tablespoon fresh lime juice
  • 1 medium clove garlic, cut into several segments
  • ½ teaspoon fine salt
  • ⅛ teaspoon ground cumin

Instructions

  1. Char the Jalapeño: Using heat-safe tongs, hold the jalapeño about 2 inches above a gas stove flame over medium heat. Rotate every 60 to 90 seconds until mostly blackened on all sides. Place it in a small paper bag or cover with plastic wrap in a bowl for 10 minutes to steam, which loosens the charred skin.
  2. Prepare Jalapeño: After steaming, wipe off the charred skin with a clean tea towel. Cut off the green flesh and slice it into smaller pieces.
  3. Combine Ingredients: Add the sliced jalapeño pieces, cilantro, sour cream, lime juice, garlic segments, salt, and ground cumin to a food processor.
  4. Blend Sauce: Process all ingredients until smooth and light green with tiny flecks of cilantro visible.
  5. Serve or Store: Use immediately as a sauce or refrigerate for a couple of hours to allow flavors to meld. Store in an airtight container in the refrigerator for up to 5 days.

Notes

  • Charring the jalapeño is optional; you can substitute with fresh chopped jalapeño if you prefer less smokiness.
  • If you want a milder sauce, remove the jalapeño seeds before blending.
  • Adjust lime juice to taste for desired tanginess.
  • This sauce pairs wonderfully with Mexican dishes, grilled chicken, fish, or as a tangy salad dressing.
  • Use gluten-free sour cream to keep the recipe gluten-free.
