A refreshing and vibrant Citrus Jicama Avocado Salad combining the crispness of jicama and the creaminess of avocado with juicy citrus wedges. Tossed in a zesty dressing made from orange juice, lime juice, olive oil, and apple cider vinegar, and garnished with red onion, cilantro, and crumbled feta cheese, this salad is perfect as a light lunch or side dish.

Ingredients

Salad Ingredients

  • 1 Small Jicama (sliced thin and then cut julienne)
  • 2 Avocados (sliced)
  • 3 Oranges (peeled with a knife and cut into wedges)
  • 2 Tablespoons Red Onion (diced)
  • 1/3 Cup Cilantro (chopped)
  • 1/3 Cup Feta (use the brick and crumble it yourself)

Dressing Ingredients

  • 2 Tablespoons Orange Juice
  • 2 Tablespoons Lime Juice
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Apple Cider Vinegar
  • 1/2 teaspoon Kosher Salt (or to taste)
  • Dash Cayenne

Instructions

  1. Prepare the Salad Ingredients: Thinly slice the jicama and cut it into julienne strips. Slice the avocados, peel the oranges with a knife and cut into wedges, dice the red onion, chop the cilantro, and crumble the feta cheese yourself for the best texture and flavor.
  2. Make the Dressing: In a bowl, whisk together orange juice, lime juice, olive oil, apple cider vinegar, kosher salt, and a dash of cayenne pepper until well combined.
  3. Combine and Toss: Place all the salad ingredients in a large mixing bowl. Pour the dressing over the salad and toss gently to ensure all pieces are evenly coated.
  4. Chill: Cover the salad and set it in the fridge for 15-20 minutes to allow the flavors to meld and the salad to chill before serving.

Notes

  • Use ripe avocados for creaminess and flavor.
  • Peeling oranges with a knife and removing the pith enhances texture and appearance.
  • Crumbled feta from a block cheese has better flavor and texture than pre-crumbled.
  • Adjust cayenne pepper quantity to your preferred spice level.
  • This salad is best served chilled but should be eaten within a day to maintain freshness.
