This Coconut Rice recipe delivers a creamy, fragrant side dish made with jasmine rice cooked in full-fat coconut milk. The rice is rinsed to remove excess starch for a fluffy texture, then simmered gently to absorb the rich coconut flavor, making it a perfect accompaniment to spicy dishes like jerk chicken or shrimp.

Ingredients

Main Ingredients

  • 1.5 cups jasmine rice
  • 13.5 fluid ounces full-fat coconut milk (one 13.5 oz can)
  • 0.3 cups water (1/3 cup)
  • 0.5 teaspoons kosher salt
  • 1 teaspoon granulated sugar (optional)

Instructions

  1. Rinse: Place 1.5 cups jasmine rice in a fine mesh strainer and rinse under cold water, stirring gently with your hand until the water runs mostly clear. This step removes excess surface starch, which is key to achieving fluffy, non-gluey rice. Do not skip this step.
  2. Add Coconut Milk: Pour the entire can of full-fat coconut milk into a medium saucepan (shake the can before opening, as separation is normal). Add 1/3 cup water, 1/2 teaspoon kosher salt, and 1 teaspoon granulated sugar if using. Stir to combine, then add the rinsed rice and stir again to evenly distribute.
  3. Boil: Bring the rice mixture to a full boil over medium-high heat, stirring occasionally to prevent sticking or burning at the bottom of the pan.
  4. Simmer: Once boiling, reduce heat to low and cover the saucepan. Let the rice simmer gently for 15 minutes without lifting the lid to maintain trapped steam, which ensures even cooking.
  5. Steam: Remove the pan from heat but keep it covered. Let the rice sit for 5 to 10 minutes to finish steaming and absorb any remaining liquid.
  6. Serve: Remove the lid and fluff the coconut rice gently with a fork. Serve immediately as a creamy, flavorful base for spicy dishes such as jerk chicken or jerk shrimp.

Notes

  • Rinsing the rice thoroughly is essential to avoid sticky, gummy texture.
  • Using full-fat coconut milk provides the best richness and flavor.
  • Adjust the sugar based on your preference or omit it entirely.
  • Do not lift the lid during simmering to ensure properly cooked rice.
  • Fluff the rice gently to avoid crushing the grains.
