A refreshing and flavorful Cold Sesame Noodle salad that combines perfectly cooked spaghetti with fresh vegetables and a savory sesame dressing. This easy-to-make dish is ideal for quick lunches or light dinners and is best served chilled with a zesty lime wedge.

Ingredients

Pasta

  • ½ lb. spaghetti (uncooked)

Vegetables & Herbs

  • 1 red bell pepper (sliced thin, julienne cut)
  • ½ cup grape tomatoes (quartered)
  • ½ clamshell fresh basil (minced, about 0.25 oz)
  • 3 green onions (sliced)
  • 1 lime (cut into wedges)

Seasonings & Sauces

  • ½ Tbsp sriracha
  • 1 Tbsp sesame seeds
  • 2 Tbsp toasted sesame oil
  • 2 Tbsp soy sauce

Instructions

  1. Boil the Water: Fill a large pot with water and bring it to a rolling boil, preparing it for cooking the spaghetti noodles.
  2. Prep the Ingredients: While waiting for the water to boil, prepare the fresh ingredients by quartering the lime, julienning the red bell pepper, quartering the grape tomatoes, mincing the basil, and slicing the green onions.
  3. Cook the Noodles: Add the spaghetti to the boiling water and cook for approximately 12 minutes or until the noodles are al dente, tender but still firm to the bite.
  4. Drain and Rinse: Drain the cooked pasta in a colander and immediately rinse with cold water to stop the cooking process and cool the noodles down.
  5. Combine Ingredients: Transfer the cooled spaghetti noodles to a large mixing bowl and add the sliced bell pepper, quartered grape tomatoes, minced basil, sliced green onions, sriracha, sesame seeds, toasted sesame oil, and soy sauce.
  6. Toss and Chill: Thoroughly toss all the ingredients together to ensure the noodles are evenly coated with the sesame dressing and vegetables. Refrigerate the mixture until ready to serve.
  7. Serve: Before serving, toss the noodles once more, then plate and garnish each serving with a lime wedge for an extra burst of fresh citrus flavor.
