A fresh and vibrant corn salad featuring sweet corn, creamy avocado, juicy tomatoes, and a zesty lime dressing. Perfect as a side dish, this salad is quick to prepare, ideal for summer meals, and can be made with fresh or canned corn. The combination of textures and bright flavors makes it a favorite for any occasion.

Ingredients

Salad

  • 2 corn on the cob (or 400g / 14 oz canned corn, drained)
  • 1 avocado, cut into large dice
  • 200 g / 7 oz cherry tomatoes, halved (or 2 large tomatoes, cut into large dice)
  • 2 shallots/scallions, finely sliced or 1 small red onion, finely chopped
  • 1/3 cup finely chopped coriander/cilantro (or parsley)

Dressing

  • 2 tbsp lime juice or 1 1/2 tbsp lemon juice
  • 3 tbsp extra virgin olive oil
  • Salt and pepper, to taste

Instructions

  1. Cook Corn: Bring a large pot of water to a boil and cook the corn on the cob for 3 minutes. Once cooked, drain the corn and run it under cold water to stop further cooking. Allow the corn to cool until it is safe to handle.
  2. Prepare Corn Kernels: Once cool, carefully cut the kernels off the cob using a sharp knife. Set the kernels aside.
  3. Combine Ingredients: In a large bowl, add the corn kernels, diced avocado, halved cherry tomatoes, finely sliced shallots or chopped red onion, and chopped coriander or parsley.
  4. Add Dressing: Drizzle the lime or lemon juice and extra virgin olive oil over the salad ingredients. Add a generous pinch of salt and freshly ground black pepper to taste.
  5. Toss and Serve: Gently toss all the ingredients together to combine well without mashing the avocado. Serve immediately for the freshest taste.

Notes

  • This salad pairs beautifully as a side dish with garlic prawns or grilled proteins.
  • Fresh corn is preferred for its sweet crunch, but canned corn works well as a convenient alternative.
  • When avocado is unavailable, substituting cucumber adds a refreshing juicy crunch to the salad.
  • Both lime and lemon juice work well in the dressing; choose based on your preference.
