This Fried Zucchini recipe offers a wonderfully crispy and golden appetizer or side dish. Fresh zucchini slices are dipped in milk, coated with flour and panko breadcrumbs, then fried to perfection. The result is a crunchy, flavorful treat that pairs beautifully with your favorite dipping sauce.

Ingredients

For Frying

  • Vegetable oil, for frying (about ¼-½ inch deep in pan)

Breading Mixture

  • 2-3 cups milk
  • 3 cups all-purpose flour
  • 2 cups panko bread crumbs (plain or Italian)

Main Ingredient

  • 2 medium zucchinis, sliced at an angle about ¼ inch thick

Instructions

  1. Heat the oil: Fill a frying pan with ¼ to ½ inch of vegetable oil and heat over medium heat until the oil reaches between 350-375 degrees Fahrenheit, the ideal temperature for frying to achieve a crispy exterior.
  2. Prepare breading stations: While the oil is heating, pour the milk into a medium-sized bowl. Place the flour into one gallon-sized resealable plastic bag and the panko breadcrumbs into another separate gallon-sized resealable bag.
  3. Coat the zucchini: Working in batches to avoid overcrowding, dunk zucchini slices first into the milk, ensuring each piece is well-coated. Next, place the slices into the bag with flour, shake gently to cover all sides evenly, then return the slices quickly to the milk to re-coat. Finally, transfer the slices to the breadcrumbs bag and shake until fully coated to form a thick, crispy crust.
  4. Fry the zucchini slices: Carefully place the coated zucchini slices into the hot oil in batches. Fry for 1-2 minutes on each side or until they turn a beautiful golden brown, signaling they are perfectly cooked with a crispy texture.
  5. Drain and serve: Remove the fried zucchini with a slotted spoon and place them on a plate lined with paper towels to absorb any excess oil. Repeat the breading and frying process until all slices are cooked. Serve the fried zucchini warm with your favorite dipping sauce.

Notes

  • Make sure the oil is at the right temperature (350-375°F) to avoid soggy or greasy zucchini.
  • Use panko breadcrumbs for a lighter, crunchier coating compared to regular breadcrumbs.
  • Slice zucchini evenly to ensure consistent cooking.
  • Serve immediately for the best texture and flavor.
  • Try pairing with ranch dressing, marinara, or garlic aioli for dipping.
