Enjoy crispy, golden homemade McDonald's-style hash browns that are easy to make with simple ingredients. These hash browns boast a perfectly crunchy exterior and a soft, tender interior, achieved by lightly cooking and frying shredded potatoes. Ideal for breakfast or meal-prepping, this recipe ensures crispy perfection without the need for deep frying or complicated steps.

Ingredients

Potatoes

  • 2 large Russet potatoes (or Yukon Gold for a slightly different texture)

Seasonings

  • 1 teaspoon salt
  • ½ teaspoon sugar
  • ½ teaspoon black pepper
  • ½ teaspoon dry beef stock powder (for added depth of flavor)

Binding & Oil

  • 1 tablespoon cornstarch
  • ½ cup vegetable oil (sunflower, rapeseed, canola, avocado, peanut, or macadamia oil)

Instructions

  1. Prepare the Potatoes: Peel the potatoes and place them in a bowl of cold water to prevent browning. Shred the potatoes using the large holes of a box grater. Rinse the shredded potatoes twice in cold water to remove excess starch, draining each time until the water is clear. Then, drain thoroughly and squeeze out as much water as possible using a fine mesh sieve or a clean kitchen towel for maximum crispiness.
  2. Confit Cooking for a Better Texture: Heat a nonstick skillet over low heat and add about 2 tablespoons of vegetable oil. Add the shredded potatoes and cook gently for 5 to 6 minutes, stirring occasionally, aiming to soften them without browning. Remove from heat and let cool slightly.
  3. Combine Ingredients and Shape the Patties: In a large bowl, mix the cooked potatoes with salt, sugar, black pepper, cornstarch, and dry beef stock powder until evenly combined. Portion out about ¼ cup of the mixture on parchment paper, flatten it into a rectangle roughly half an inch thick, then add 2-3 tablespoons more on top and fold the parchment over to form a uniform patty. Repeat to make four hash brown patties.
  4. Fry the Hash Browns: Heat the remaining oil in a nonstick skillet over medium-high heat. Once hot, carefully add the patties and fry for 2-3 minutes per side until golden brown and crispy. Flip gently with a spatula to avoid breaking. Drain cooked hash browns on paper towels to remove excess oil.

Notes

  • Remove as much moisture from the potatoes as possible to ensure the crispiest hash browns; excess water causes steaming, not frying.
  • Lightly cooking the potatoes before shaping helps improve texture and binding.
  • Use a nonstick skillet to avoid the hash browns sticking or breaking apart during frying.
  • If hash browns fall apart, try squeezing out more moisture or adding a little extra cornstarch to bind the mixture.
  • If hash browns are greasy, ensure the oil is sufficiently hot before frying to prevent excess absorption.
  • For uneven browning, adjust heat to medium rather than high to promote even cooking.
  • For a healthier option, you can bake at 400°F (200°C) for 20-25 minutes, flipping halfway, or air fry at 375°F (190°C) for 10-15 minutes, flipping halfway.
