A refreshing and light Dilly White Bean Cucumber Salad combining tender white beans, crisp cucumbers, and crunchy radishes tossed in a zesty lemon garlic vinaigrette with fresh dill and green onions. Perfect as a healthy side or light lunch, this salad is quick to prepare and packed with fresh flavors.

Ingredients

Vinaigrette

  • 1 garlic clove, minced
  • Juice of 1 small lemon (about 2 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • Black pepper, to taste

Salad

  • 2 (15-ounce) cans white beans, rinsed and drained
  • 2 Persian cucumbers, thinly sliced (or 1/2 a large cucumber)
  • 5-7 radishes, cut into matchsticks
  • 0.75 oz fresh dill, stems removed and finely chopped
  • 2 green onions, green and white parts thinly sliced

Instructions

  1. Make the Vinaigrette: In a small bowl, combine the minced garlic, fresh lemon juice, extra virgin olive oil, Dijon mustard, salt, and black pepper. Whisk thoroughly until emulsified. Let the mixture sit for 5 minutes to mellow the sharpness of the raw garlic.
  2. Prepare the Salad: In a large mixing bowl, combine the rinsed and drained white beans, thinly sliced cucumbers, radish matchsticks, chopped fresh dill, and sliced green onions. Pour the vinaigrette over the salad ingredients and gently toss until everything is evenly coated with the dressing. Taste and adjust salt and pepper as needed.
  3. Serve: Serve the salad immediately for a fresh crunch, or refrigerate for 15 to 30 minutes to allow flavors to meld. Leftovers can be stored in the refrigerator for up to 5 days, making it a convenient and delicious make-ahead dish.

Notes

  • For best texture, use Persian cucumbers or another crisp variety.
  • Rinsing canned beans thoroughly removes excess sodium and starch for a cleaner taste.
  • You can substitute fresh lemon juice with lime juice for a different citrus twist.
  • This salad pairs well with grilled proteins or as a light standalone meal.
  • If storing, keep dressing separate and add just before serving to maintain crispness.
