Easy Bombay Potatoes is a flavorful and crispy roasted potato dish infused with turmeric, mustard seeds, and aromatic curry spices, perfect as a side or main for a comforting meal.

Ingredients

Potatoes

  • 8 to 10 medium potatoes, peeled & cut into small chunks (Maris Piper recommended)
  • ½ tsp sea salt
  • 1 tsp turmeric

Spices & Seasonings

  • 2 tsp black mustard seeds
  • 2 tsp curry powder or paste or garam masala (Pataks Madras paste used)

Others

  • 2 to 4 tbsp rapeseed oil or vegetable oil
  • 1 onion, diced

Instructions

  1. Preheat Oven: Preheat your oven to 200°C / Gas Mark 6 / 390°F to get it ready for roasting the potatoes.
  2. Boil Potatoes: Place the peeled and chopped potatoes in a large saucepan and cover them with water. Add half a teaspoon of sea salt and one teaspoon of turmeric before bringing to a boil. Once boiling, simmer gently for 5 minutes to start softening the potatoes.
  3. Drain & Toss: Drain the partially cooked potatoes thoroughly. Then toss them in a large bowl with the remaining ingredients—rapeseed or vegetable oil, diced onion, black mustard seeds, and your choice of curry powder, paste, or garam masala—to ensure every piece is well-coated with the flavorful mixture.
  4. Roast Potatoes: Transfer the coated potatoes onto a large roasting pan in a single layer. Place the pan in your preheated oven and roast for 30 to 40 minutes until the potatoes turn golden and crispy. Be sure to turn the potatoes halfway through roasting to promote even cooking and browning.

Notes

  • Use Maris Piper potatoes or a similar waxy variety to achieve the best texture.
  • You can adjust the amount of oil depending on your preference for crispiness.
  • Turning the potatoes halfway through roasting ensures they crisp evenly on all sides.
  • For a spicier kick, increase the curry powder or paste quantity slightly.
