Ingredients

Chicken and Marinade

  • 1 ½ pounds chicken tenderloins (cut thick ones in half lengthwise)
  • ½ cup olive oil
  • juice of one lemon
  • 1 teaspoon salt
  • ¼ teaspoon cracked black pepper
  • ½ teaspoon crushed red pepper flakes
  • 1 tablespoon minced garlic
  • ½ teaspoon garlic powder
  • 1 tablespoon Herbs de Provence (or Italian seasoning)

5-Minute Tzatziki Sauce

  • ½ cucumber (sliced or chopped)
  • 1 tablespoon freshly squeezed lemon juice
  • salt and pepper (to taste)
  • pinch of fresh dill (optional)

Assembly Ingredients

  • white or whole wheat pita bread
  • crumbled feta cheese
  • green-leaf lettuce
  • ½ cup cherry tomatoes (halved)
  • ¼ red onion (thinly sliced)

Instructions

  1. Prepare the Marinade: In a bowl, stir together olive oil, lemon juice, salt, cracked black pepper, crushed red pepper flakes, minced garlic, garlic powder, and Herbs de Provence to create the marinade.
  2. Marinate the Chicken: Add the chicken tenderloins to the marinade, toss to coat evenly, cover tightly, and refrigerate for at least 30 minutes, or up to two hours for enhanced flavor.
  3. Make the Cucumber Salad: While the chicken marinates, combine sliced or chopped cucumber, cherry tomatoes, red onion, lemon juice, salt, pepper, and fresh dill if using. Set aside to allow flavors to meld.
  4. Cook the Chicken: Preheat your grill or skillet to medium heat. Using tongs, transfer the marinated chicken to the cooking surface and cook for 5-6 minutes per side until fully cooked and juices run clear.
  5. Assemble the Gyros: Arrange pita breads on a plate. Layer with green-leaf lettuce, cooked chicken, cucumber salad, crumbled feta cheese, and a generous dollop of tzatziki sauce.
  6. Serve: Fold or roll the filled pita like a sandwich. Serve immediately and enjoy your homemade chicken gyros!

Notes

  • Marinate the chicken longer (up to two hours) for more intense flavor.
  • You can use either white or whole wheat pita bread depending on preference.
  • Herbs de Provence can be substituted with Italian seasoning if desired.
  • Adjust salt and pepper in the tzatziki sauce and cucumber salad to taste.
  • Fresh dill is optional but adds a bright herbal note to the tzatziki.
