Ingredients

Main Ingredients

  • 3 cups boiling water
  • 2 cups jasmine rice, rinsed
  • 5 tbsp butter
  • 13.5 ounces canned coconut milk
  • 1/3 cup fresh squeezed lime juice
  • 1/2 tsp lime zest
  • 2 tsp salt

Garnish

  • 4 large scallions, sliced 1" thick (save about 1/4 cup to garnish after cooking)

Instructions

  1. Rinse Rice: Quickly rinse the jasmine rice in a large sieve under cold running water to remove excess starch and keep the rice from clumping.
  2. Add Ingredients to Slow Cooker: Transfer the rinsed rice to the slow cooker, then add boiling water, butter, canned coconut milk, fresh lime juice, lime zest, salt, and sliced scallions.
  3. Cook Rice: Set the slow cooker to high and cook the rice for 30 minutes to 1 hour. Begin checking at 30 minutes to see if the rice is fluffy and fully cooked; cook longer if needed for desired texture.
  4. Serve: Once cooked, fluff the coconut rice with a fork and transfer it to a large serving bowl. Garnish with the reserved scallions on top before serving.
