This easy cookie icing recipe creates a smooth, drippy icing perfect for outlining and flooding sugar cookies. Made with powdered sugar, milk, vanilla extract, and corn syrup or honey, the icing hardens nicely after drying, allowing for beautiful, long-lasting cookie decorations.

Ingredients

Basic Icing Ingredients

  • 2½ cups (310 g) powdered sugar (also known as icing sugar or confectioners’ sugar)
  • 3 tbsp milk
  • ½ tsp vanilla extract
  • 2 tbsp light corn syrup or honey

Optional Add-ins or Toppings

  • ¼ tsp almond extract (optional)
  • Gel food coloring (various colors, optional)
  • Sprinkles (optional)

Instructions

  1. Sift Powdered Sugar: Begin by gently sifting 2½ cups of powdered sugar into a large mixing bowl. This step, although optional, helps to eliminate lumps and ensures your icing is smooth and easy to mix.
  2. Add Other Ingredients: To the sifted powdered sugar, add 2 tbsp light corn syrup or honey, ½ tsp vanilla extract, and 2 tbsp of the 3 tbsp milk. Whisk these ingredients together gently using a fork or a regular whisk. Using an electric mixer on low speed is optional but not necessary at this stage.
  3. Adjust Consistency: Slowly add the remaining milk a little at a time, about 1 teaspoon at a time, mixing well after each addition. The goal is to achieve a thick yet drippy consistency similar to pancake batter, perfect for flooding and outlining cookies. If the icing becomes too thin, add more powdered sugar gradually.
  4. Ice Cookies & Decorate: Once you have the perfect icing consistency, use it to decorate your cooled sugar cookies. You can separate the icing into smaller bowls and tint with gel food coloring if desired. Use piping bags, paint brushes, squeeze bottles, or even dip your cookies for icing application. Add sprinkles or other decorations while the icing is still wet.
  5. Rest & Serve: Allow your iced cookies to dry at room temperature. The surface will dry within a few hours, but full hardening typically takes 12 to 24 hours depending on thickness, humidity, and climate. Wait for the icing to completely dry to stack or store the cookies safely.

Notes

  • Sifting powdered sugar helps avoid lumps and creates a smoother icing.
  • Adjust milk quantity gradually to get your desired icing consistency; it should be thick but drippy.
  • Vanilla extract can be substituted with almond extract for a different flavor.
  • Use gel food coloring for vibrant colors without altering icing consistency.
  • Allow icing to dry completely before stacking cookies to avoid smudging.
  • Store decorated cookies in an airtight container once icing is fully hardened.
