This easy homemade focaccia bread recipe brings authentic Italian flavors to your kitchen with simple ingredients like bread flour, yeast, olive oil, and fresh rosemary. With a soft interior and crispy golden crust, this flatbread is perfect as an appetizer or side dish.

Ingredients

Dough Ingredients

  • 4 cups (500g) bread flour or all-purpose flour
  • 2 ¼ teaspoons (7g) active dry yeast or instant yeast
  • 2 teaspoons (10g) salt
  • 1 ¾ cups (415ml) warm water
  • ¼ cup (60ml) extra virgin olive oil, plus extra for drizzling

Topping

  • 2 tablespoons fresh rosemary leaves
  • Coarse sea salt for sprinkling

Instructions

  1. Mixing and kneading the dough: In a large bowl, combine the flour, salt, and yeast. Add the warm water and olive oil. Mix until a shaggy dough forms, then knead for about 10 minutes until the dough is smooth and elastic, ensuring proper gluten development.
  2. First rise: Place the dough in an oiled bowl, cover it tightly with plastic wrap, and let it rise in a warm place for 1 to 2 hours, or until it has doubled in size, which develops flavor and texture.
  3. Shaping and dimpling the focaccia: Grease a baking sheet generously with olive oil. Gently transfer and stretch the risen dough to fit the pan. Use your fingertips to create characteristic dimples across the surface to trap olive oil and toppings.
  4. Second rise: Cover the shaped dough and allow it to rise again for approximately 30 minutes to achieve a light texture.
  5. Topping and baking: Preheat the oven to 425°F (220°C). Drizzle the dough liberally with olive oil, sprinkle with coarse sea salt and fresh rosemary leaves. Bake for 20 to 25 minutes until the focaccia is golden brown and crisp on the outside.

Notes

  • Feel free to add other toppings such as sliced olives, cherry tomatoes, or caramelized onions to customize your focaccia.
  • Use bread flour for a chewier texture or all-purpose flour for a lighter bread.
  • Make sure your water is warm (about 100°F/38°C) to activate the yeast without killing it.
  • Serve focaccia warm or at room temperature with dips like olive oil and balsamic vinegar.
  • For extra crispiness, bake the focaccia on the lower rack of your oven.
  • Once baked, store in an airtight container and consume within 2 days or freeze for longer storage.
