Fluffy, buttery Keto Biscuits that are tender, delicious, and easy to make. These low-carb biscuits are perfect as a side for breakfasts, soups, or holiday meals, with only 3 grams net carbs per serving.

Ingredients

Dry Ingredients

  • 1/2 cup (60 g) coconut flour
  • 1/2 cup (56 g) almond flour
  • 2 tsp baking powder
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 3/4 cup (84.75 g) shredded Cheddar cheese, divided

Wet Ingredients

  • 3 large egg whites
  • 2 large eggs
  • 3/4 cup (172.5 g) sour cream or Greek yogurt
  • 1/4 cup (56.75 g) butter, melted

Instructions

  1. Preheat the oven: Preheat your oven to 350ºF (175ºC) and line a large baking sheet with a silicone mat or parchment paper to prevent sticking and ensure even baking.
  2. Mix dry ingredients: In a large bowl, whisk together the coconut flour, almond flour, baking powder, garlic powder, and salt until fully combined. Then stir in 1/2 cup of shredded Cheddar cheese to incorporate into the dry mix.
  3. Add wet ingredients: Stir in the egg whites, whole eggs, sour cream (or Greek yogurt), and melted butter until the batter is smooth and well combined, forming a thick dough.
  4. Portion the dough: Drop the mixture by rounded spoonfuls onto the prepared baking sheet. Keep the mounds relatively small as the biscuits will spread and rise during baking. You should be able to make 10 to 12 biscuits.
  5. Add cheese topping: Sprinkle the remaining 1/4 cup of shredded Cheddar cheese evenly on top of each biscuit mound to create a cheesy crust.
  6. Bake: Bake in the preheated oven for 20 to 23 minutes, or until the cheese is melted and the biscuits are just firm to the touch, indicating they are cooked through.
  7. Cool: Remove the baking sheet from the oven and let the biscuits cool on the pan before serving to allow them to set and enhance flavor.

Notes

  • For a dairy-free version, substitute shredded cheese with a vegan cheese alternative and use coconut cream instead of sour cream.
  • If you prefer a stronger garlic flavor, increase the garlic powder slightly.
  • These biscuits are very filling; keep portions small as they spread while baking.
  • Store leftovers in an airtight container in the fridge for up to 3 days or freeze for longer storage.
  • To reheat, warm in the oven at 300ºF for 5-7 minutes to restore crispiness.
