This Easy Zucchini Butter recipe transforms fresh zucchini and fragrant herbs into a rich, savory spread perfect for enhancing breads, roasted veggies, or grilled meats. Slow-cooked in olive oil with garlic and thyme, this versatile condiment captures the essence of summer produce with a buttery texture and bright lemon finish.

Ingredients

Vegetables and Herbs

  • 2 1/2 pounds (3 medium-large) zucchini
  • 3 cloves garlic, smashed and peeled
  • 3 to 6 sprigs fresh thyme

Oils and Seasonings

  • 2 to 4 tablespoons extra-virgin olive oil, divided
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • About 1 teaspoon fresh lemon juice

Instructions

  1. Prepare the skillet: Place a large skillet, preferably a 12-inch cast iron skillet, on a large burner and add 2 tablespoons of extra-virgin olive oil. Heat the oil over medium heat until shimmering but not smoking.
  2. Add aromatics: Add the smashed garlic cloves and fresh thyme sprigs to the hot oil. Let them infuse the oil for a few minutes, stirring occasionally to prevent burning.
  3. Cook the zucchini: Chop the zucchini into small pieces (diced or sliced) and add them to the skillet. Stir to coat the zucchini well with the infused oil and herbs.
  4. Simmer slowly: Lower the heat to medium-low and cook the zucchini mixture slowly, stirring occasionally, allowing the zucchini to break down and release moisture. Continue to cook until the zucchini is very soft, golden, and most of the liquid has evaporated, about 40 to 45 minutes. The mixture should resemble a thick, buttery spread.
  5. Season and finish: Remove the garlic cloves and thyme sprigs. Season with salt and freshly ground black pepper to taste. Stir in about 1 teaspoon of fresh lemon juice to brighten the flavors. Mix well.
  6. Cool and store: Let the zucchini butter cool to room temperature before transferring it to a clean jar or container. Store refrigerated and use within a week. Enjoy spread on bread, vegetables, or as a flavorful condiment.

Notes

  • The cooking time for the zucchini can vary depending on its moisture content; the longer it cooks, the more concentrated and buttery the final texture becomes.
  • Using a cast iron skillet aids in even cooking and caramelization but any heavy-bottomed pan will work.
  • Adjust the amount of olive oil based on desired richness and moisture level.
  • You can customize the herbs by adding rosemary or basil for different flavor profiles.
  • This recipe is naturally vegetarian and gluten free.
