These elegant, bite-sized rolls are perfect as a flavorful vegetarian starter, enhanced with a drizzle of balsamic glaze for a touch of sweetness and tang.

Ingredients

Filling

  • 1 cup ricotta cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Eggplant and Seasoning

  • 2 medium eggplants, sliced lengthwise into 1/4 inch thick strips
  • 3 tablespoons olive oil, divided
  • Salt and pepper to taste
  • Balsamic glaze for drizzling

Instructions

  1. Preheat Oven: Set your oven to 400°F (200°C) to prepare for roasting the eggplant.
  2. Slice Eggplants: Cut the eggplants lengthwise into thin strips, approximately 1/4 inch thick, ensuring even slices for uniform roasting and rolling.
  3. Season Eggplant: Brush both sides of each eggplant slice with olive oil and season generously with salt and pepper to enhance their flavor during roasting.
  4. Roast Eggplant: Arrange the slices on a baking sheet lined with parchment paper and roast in the preheated oven for about 20 minutes until tender and slightly golden.
  5. Prepare Filling: In a bowl, combine ricotta cheese, chopped sun-dried tomatoes, chopped basil, and minced garlic. Season with salt and pepper, mixing until well combined for a creamy, flavorful filling.
  6. Assemble Roll-Ups: Once the eggplant slices are roasted and cooled slightly, spoon a portion of the ricotta mixture onto one end of each slice and roll tightly to form neat rolls.
  7. Bake Roll-Ups: Lower the oven temperature to 350°F (175°C). Place the assembled roll-ups in a baking dish, drizzle with a little olive oil, and bake for 10-15 minutes until heated through and melded together.
  8. Serve: Remove from oven, drizzle with balsamic glaze for a sweet and tangy finish, and serve warm as an elegant appetizer.

Notes

  • Ensure eggplant slices are thin and even for easier rolling.
  • Use high-quality ricotta for a smoother filling texture.
  • Balsamic glaze can be homemade by reducing balsamic vinegar or store-bought for convenience.
  • Can be prepared ahead; assemble and chill before baking.
  • For a gluten-free option, confirm that sun-dried tomatoes and balsamic glaze contain no gluten additives.
