Grinder Pasta Salad offers a vibrant twist on a classic dish by combining savory deli meats, creamy provolone cheese, and fresh mixed vegetables into a flavorful and refreshing salad perfect for warm weather or as a hearty side.

Ingredients

For the Pasta Base

  • 8 ounces Rotini or Penne Pasta

For the Deli Meats

  • 4 ounces Salami, diced
  • 4 ounces Ham, diced

For the Creamy Element

  • 4 ounces Provolone Cheese, diced
  • 1/2 cup Mayonnaise

For the Freshness

  • 2 cups Mixed Vegetables (bell peppers, red onion), chopped

For the Dressing

  • 2 tablespoons Red Wine Vinegar
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Italian Seasoning

Instructions

  1. Cook the Pasta: Fill a large pot with water, add a pinch of salt, and bring to a boil. Cook the rotini or penne pasta according to package instructions and simmer for about 8-10 minutes until al dente. Drain and rinse under cold water to cool.
  2. Prepare the Dressing: In a mixing bowl, whisk together mayonnaise, red wine vinegar, garlic powder, and Italian seasoning until smooth. Taste and adjust seasonings if desired to balance acidity and flavors.
  3. Combine All Ingredients: Add the cooled pasta to the bowl with the dressing. Layer in the diced salami, ham, provolone cheese, and chopped mixed vegetables. Fold gently to evenly distribute the ingredients without breaking the pasta or veggies.
  4. Toss the Salad: Thoroughly toss the salad to incorporate the creamy dressing throughout, ensuring every bite is well coated and the flavors meld together visually and texturally.
  5. Chill & Serve: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Before serving, stir the salad again and serve chilled for best taste and texture.

Notes

  • Customize with seasonal vegetables or substitute different deli meats to suit your preferences.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days.
  • For a lower-fat version, substitute mayonnaise with Greek yogurt.
  • Ensure pasta is cooled completely before mixing to prevent wilted vegetables.
