Garlic Scape Butter is a flavorful compound butter made by blending fresh garlic scapes, parsley, lemon zest, and seasonings into softened unsalted butter. Perfect for enhancing the taste of steaks, grilled vegetables, seafood, baked potatoes, or warm bread, this easy-to-make butter adds a fresh, garlicky kick with a hint of citrus.

Ingredients

Compound Butter

  • 1 cup (227 g) unsalted butter, softened
  • 1/2 cup (40 g) garlic scapes, roughly chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tsp lemon zest
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Combine Ingredients: In a medium bowl, add the softened unsalted butter, chopped garlic scapes, fresh parsley, lemon zest, salt, and black pepper.
  2. Mix Thoroughly: Mix all ingredients together until they are evenly incorporated, ensuring the garlic scapes and seasoning are distributed throughout the butter.
  3. Shape the Butter: Transfer the mixed butter onto a piece of parchment paper or plastic wrap. Shape it into a log about 1½ inches thick, then tightly roll and twist the ends to seal it securely.
  4. Refrigerate to Firm Up: Place the rolled butter log into the refrigerator and chill for at least 1 hour until firm and easy to slice.
  5. Serve: Slice the firmed butter into rounds and use it to top steak, grilled vegetables, corn on the cob, seafood, baked potatoes, or warm bread for an extra boost of flavor.

Notes

  • Keep the butter refrigerated until ready to serve for best texture.
  • Garlic scapes have a milder garlic flavor compared to garlic cloves, lending a subtle, fresh taste.
  • You can freeze the butter logs for up to 3 months; thaw before slicing.
  • Adjust salt and pepper to taste depending on preferences and intended dishes.
  • If garlic scapes are unavailable, green garlic or fresh garlic cloves can be used as substitutes, but the flavor will be stronger.
