This Garlicky Sautéed Sweet Potatoes & Spinach is a quick, flavorful side dish featuring grated sweet potatoes sautéed to tender perfection with aromatic garlic, fresh spinach, and green onions. Ready in just 10 minutes, it's a healthy and vibrant addition to any meal.

Ingredients

Vegetables

  • 1 sweet potato, 12 ounces, peeled and grated
  • 2 green onions, thinly sliced (green and white parts separated)
  • 2 cups spinach

Oils and Seasonings

  • 4 teaspoons olive oil, divided
  • 3/4 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 2 garlic cloves, minced

Instructions

  1. Heat olive oil and sauté sweet potatoes: Heat 2 teaspoons of olive oil in a large nonstick skillet over medium-high heat. Add the grated sweet potato along with the white parts of the green onions. Stir constantly and sauté until the sweet potato starts to soften, about 3 minutes. Then stir in the dried thyme, salt, and pepper evenly to season.
  2. Add remaining ingredients and cook: Pour in the remaining 2 teaspoons of olive oil, then add the minced garlic, fresh spinach, and the green parts of the sliced green onions. Continue to cook, stirring constantly, until the spinach is just slightly wilted, which should take about 1 minute.
  3. Serve hot: Once the spinach is wilted and everything is combined, remove from heat and serve immediately as a vibrant, flavorful side dish.

Notes

  • You can adjust the amount of garlic to taste for more or less pungency.
  • For an extra protein boost, add cooked chickpeas or a fried egg on top.
  • Use fresh thyme if available for brighter herb flavor.
  • This dish is best served fresh but can be stored in the fridge for up to 2 days and reheated gently.
  • To save time, peel and grate the sweet potato in advance.
