Ingredients

Dry Ingredients

  • 250 g plain flour (all-purpose flour), sifted
  • 2 teaspoons baking powder, sifted
  • 2 teaspoons ground ginger, sifted
  • 1 tsp ground cinnamon, sifted
  • ¼ tsp ground cloves, sifted

Wet Ingredients

  • 170 g salted butter, melted
  • 130 g dark brown sugar
  • 150 g light brown sugar
  • 1 tbsp molasses
  • 1 tbsp golden syrup
  • 1 tbsp vanilla extract
  • 2 tsp finely grated fresh ginger
  • 1 egg

Icing

  • 2 tablespoons icing sugar (confectioner's sugar), sifted
  • 2-3 teaspoons fresh lemon juice, as needed

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) to ensure it’s at the perfect temperature for baking the gingerbread slice.
  2. Prepare Baking Pan: Grease and line a 20cm (8") square baking pan with baking or parchment paper to prevent sticking and help with easy removal after baking.
  3. Mix Dry Ingredients: Whisk together the sifted plain flour, baking powder, ground ginger, cinnamon, and cloves in a bowl to evenly distribute the spices and leavening agent.
  4. Combine Wet Ingredients: In a large bowl, stir together the melted salted butter, dark and light brown sugars, molasses, golden syrup, vanilla extract, and finely grated fresh ginger until fully incorporated.
  5. Add Egg: Mix the egg thoroughly into the wet mixture to help bind the ingredients and add moisture.
  6. Incorporate Dry Ingredients: Gently fold the dry flour and spice mixture into the wet ingredients until just combined to create the batter.
  7. Fill Pan: Pour the batter into the prepared baking pan, spreading it evenly into the corners and smoothing the top for an even bake.
  8. Bake: Bake in the preheated oven for 22-25 minutes. The sides should be firm while the center remains soft for the perfect texture.
  9. Cool in Pan: Let the slice cool in the pan for 10 minutes to set before removing it to avoid breaking.
  10. Cool Completely: Transfer the slice to a wire rack and allow it to cool completely to room temperature before icing.
  11. Prepare Icing: In a small bowl, combine the sifted icing sugar with 1 teaspoon of fresh lemon juice. Mix well.
  12. Adjust Icing Consistency: Add remaining lemon juice in ¼ teaspoon increments as needed until the icing reaches a smooth, pipeable or drizzle consistency.
  13. Decorate Slice: Pipe or drizzle the lemon icing onto the cooled gingerbread slice evenly.
  14. Serve: Slice into squares and serve to enjoy the perfect balance of spicy and sweet flavors.

Notes

  • Use fresh grated ginger for a more vibrant and zingy flavor compared to ground ginger alone.
  • Ensure not to overbake; the center should remain slightly soft for a moist texture.
  • Adjust lemon juice in icing gradually to avoid making it too runny.
  • This slice keeps well stored in an airtight container at room temperature for up to 3 days.
  • For a stronger ginger flavor, you can add an extra ½ teaspoon of ground ginger or more fresh ginger.
