A traditional Greek recipe featuring tender green beans simmered in a savory tomato sauce with olive oil, onion, garlic, and dill. This comforting dish is perfect as a side or light vegetarian main course.

Ingredients

Vegetables and Aromatics

  • 1 medium onion, chopped
  • 3 cloves garlic, chopped
  • 1 1/2 pounds green beans, ends trimmed and cut into approximately 2-inch pieces

Liquids and Seasonings

  • 1/2 cup olive oil
  • 1 can (8-ounce) tomato sauce (or 1/2 of a 15-ounce can)
  • 1/2 cup water or broth
  • 2 teaspoons dried dill (or 1 tablespoon chopped fresh dill)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Garnish

  • Chopped fresh parsley or dill sprigs (optional)

Instructions

  1. Heat olive oil: Heat the olive oil over medium-high heat in a large skillet or sauté pan until shimmering.
  2. Cook onion: Add the chopped onion, reduce heat to medium-low, and cook for 8-10 minutes until softened and translucent, stirring occasionally.
  3. Add garlic: Stir in the chopped garlic and cook briefly for 5-10 seconds until fragrant but not browned.
  4. Add green beans: Add the trimmed and cut green beans to the pan and stir briefly to combine with the onion and garlic mixture.
  5. Add tomato sauce and dill: Pour in the tomato sauce, add water or broth, and stir in dried dill if using. Mix everything well.
  6. Simmer covered: Bring the mixture to a gentle simmer. Reduce heat to low, cover the pan, and cook for 30-35 minutes, stirring occasionally, until the green beans are very tender.
  7. Finish with fresh dill and season: If using fresh dill, stir it in and cook for an additional 1 to 2 minutes. Season the dish generously with salt and freshly ground black pepper to taste.
  8. Garnish and serve: Transfer to a serving dish and garnish with chopped fresh parsley or dill sprigs if desired. Serve warm as a side dish or main course.

Notes

  • Use broth instead of water for extra flavor.
  • Adjust cooking time slightly depending on the freshness and thickness of green beans.
  • Fresh dill adds a brighter, herbaceous note; dried dill is convenient and effective.
  • This dish is naturally vegetarian and can be served hot or at room temperature.
  • Leftovers keep well refrigerated for up to 3 days and can be reheated gently on stovetop.
