Ingredients

Chicken Marinade

  • 1 ½ pounds chicken breasts, cut into 1-inch strips (about 3 medium-large breasts)
  • ½ cup plain full-fat Greek yogurt
  • ⅓ cup olive oil
  • 1 tablespoon garlic, minced
  • 2 teaspoons Herbs de Provence (or Italian seasoning)
  • 1 teaspoon salt
  • ½ teaspoon cracked black pepper

Lemon Rice

  • 1 batch lemon rice (prepared separately)

Vegetables and Toppings

  • ½ cucumber, peeled and sliced
  • 1 tomato, sliced
  • ¼ red onion, thinly sliced
  • Fresh lemon juice, salt, and pepper to taste
  • 1 cup tzatziki sauce or feta sauce (see notes)

Bread

  • 4 Greek-style pitas (or flatbread or naan)

Instructions

  1. Marinate the Chicken: In a bowl, combine the Greek yogurt, olive oil, minced garlic, Herbs de Provence, salt, and cracked black pepper. Add chicken strips to the marinade and toss well to coat evenly. Cover and refrigerate for 1 to 4 hours to allow flavors to penetrate.
  2. Prepare Oven and Lemon Rice: Preheat the oven to 425°F (220°C). While the oven is heating, begin cooking your lemon rice on the stovetop according to your preferred recipe or instructions. This allows both components to be ready simultaneously.
  3. Bake the Chicken: Grease a sheet pan with a thin layer of oil or cooking spray. Using a fork or tongs, transfer the marinated chicken pieces to the pan in a single layer. Bake for 10 minutes, then toss or flip the pieces for even cooking. Continue baking for an additional 5 to 10 minutes. Switch the oven setting to BROIL and cook for 2 to 3 minutes more, watching carefully until the edges of the chicken start to char slightly for enhanced flavor.
  4. Make the Cucumber Salad: In a bowl, combine peeled and sliced cucumber, sliced tomato, and thinly sliced red onion. Toss with freshly squeezed lemon juice and season with salt and pepper to taste, creating a refreshing salad to complement the gyros.
  5. Assemble the Gyros: Warm the Greek-style pitas briefly if desired. To assemble, start by placing a generous spoonful of lemon rice on each pita, then top with baked chicken strips, the fresh cucumber salad, and a dollop of tzatziki sauce or feta sauce. Fold or roll the pita to serve and enjoy your homemade Greek-style chicken and rice gyros.

Notes

  • The lemon rice can be prepared ahead of time and reheated when assembling the gyros.
  • If you prefer a tangier sauce, substitute tzatziki with feta sauce for a creamy, salty flavor.
  • For extra texture and flavor, consider adding fresh herbs like dill or parsley to the cucumber salad.
  • Make sure to watch the chicken closely while broiling to prevent burning.
  • Leftover gyros can be wrapped tightly in foil and refrigerated for up to 2 days.
