This delicious recipe for Grilled Portobello Mushrooms offers a savory, smoky flavor perfect as a side dish or a hearty vegetarian main. Marinated in a blend of extra-virgin olive oil, balsamic vinegar, soy sauce, and garlic, the mushrooms are grilled to juicy perfection with a tender texture and an appetizing crosshatch pattern that enhances both appearance and flavor absorption.

Ingredients

For the Mushrooms and Marinade

  • 4 portobello mushrooms
  • ⅓ cup extra-virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon minced garlic
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder

Instructions

  1. Prepare the Mushrooms: Cut off the stems from the portobello mushrooms. Use a spoon to carefully scoop out the brown gills from the caps. Gently wipe the surface of the mushrooms with a damp paper towel to remove any dirt or debris.
  2. Score the Mushrooms: Using the tip of a paring knife, make a ½-inch crosshatch pattern on the tops of the mushroom caps. Ensure the scores are about 1/16-inch deep, which helps the marinade penetrate the mushrooms for better flavor.
  3. Make the Marinade: In a small bowl, whisk together extra-virgin olive oil, balsamic vinegar, soy sauce, minced garlic, kosher salt, black pepper, and garlic powder until thoroughly combined.
  4. Marinate the Mushrooms: Place the prepared mushrooms into a large plastic bag or a shallow baking dish. Pour the marinade over them and turn the mushrooms to coat evenly. Allow the mushrooms to marinate for 30 to 60 minutes to absorb the flavors.
  5. Grill the Mushrooms: Barbecue Method: Preheat your grill to medium-high heat (350 to 400ºF / 177 to 204ºC). Clean the grill grates and grease them using tongs holding a paper towel dipped in oil to prevent sticking. Remove the mushrooms from the marinade and place them cap-side down on the grill. Cover and cook for 4 to 6 minutes. Flip the mushrooms, cover again, and cook for an additional 3 to 5 minutes until tender.
Grill Pan Method: Heat a grill pan over medium-high heat and grease it with oil. Place the mushrooms on the pan and cook for 4 to 5 minutes. Flip and cook for another 2 to 3 minutes until the mushrooms are tender and cooked through.

Notes

  • For best results, use fresh portobello mushrooms without blemishes or deep wrinkles.
  • Marinating for longer than 60 minutes is fine but avoid exceeding 2 hours to prevent the mushrooms from becoming too soft.
  • If you don’t have a grill, a grill pan is an excellent alternative to achieve those char marks and smoky flavor.
  • You can serve these grilled portobellos as a meat substitute in sandwiches, salads, or alongside other grilled vegetables.
  • Adjust seasoning to taste or add fresh herbs such as thyme or rosemary to the marinade for extra aroma.
